Unless you are catching fish and seafood yourself, pretty much all of it is flash frozen to kill parasites and lengthen shelf life (aside from live mollusks and lobsters). Flash frozen does not equal poor quality.
Actually its -4 F for 24 hours not 7 days . and thats just for sushi that isnt being sold right away, Sushi is usually made from sushi grade seafood, meaning seafood that is more likely to be safe eating raw from water to plate. ANYTHING frozen looses quality by alot.
Yes! You are right. When fisherman go out to catch fish out in the sea, they instantly freeze it so that it stays fresh by the time they make it back to the docks. Fisherman can be out for days, weeks, even months that could be up to 60 days or longer. So “fresh” ain’t fresh unless it’s alive and moving.

If you eat food fresh off the vine (or out of the shell, etc.) it will taste fresher than if you freeze it. If you simply heat food up it will it will taste fresher than if you nuke it. Basically, the less you alter the original state of food, the more fresh (pure) it is. That is not to say that flash frozen food cannot taste fresh compared to normal frozen, or even taste better than unfrozen food that has been sitting in a fridge for days. Of course it will. But it will not be purely fresh, as food that has just been freshly harvested and prepared.

And we are a chain restaurant - everything has to taste exactly the same everywhere + we are kind of a fast food place, but we still produce a lot ourselves. I wish we were more people at work tho, it can get overwhelming. 😣 I do love our food either way. Flavorful and juicy burgers and I love our salads.

The point of flash freezing is that it won’t damage the quality of the meat. The formation of ice crystals in regular freezing works by water molecules joining to form the crystals, which makes for poor quality because the water is moving throughout the meat, rather than staying in one spot.
All store bought freezer food is flash frozen! They don't have ice crystal particles on them like when you freeze your own food and leave it for 2 months!

The tables are cover with disposal paper liners and no silverware. It usually cost around $200 all you can eat for 4 people Edit: they also give you the same bibs tools and buckets. Very cool video

Flash frozen means that they freeze a product quickly to prevent the formation of ice crystals. The ice crystals can damage the product with freezer burn.
