I've a question, do you have any idea how to publish the 'Real-Time Event' to a 'Platform Event' and how to trigger the 'Platform-Event triggered Flow' for sending emails to admins.
If you are talking about real time changes in records then definitely we can use trigger but if you are talking about changes in metadata then probably metadata Api can be used otherwise it's not possible to trigger platform event for changes in metadata.
Talking about the second part of your question, you might have seen in the video we are calling platform event triggered flow by creating one of the Platform-Event record in a different flow the same way you can trigger a Platform-Event triggered Flow.

When im trying to run the flow im receiving an error which says
"The flow failed to start because the provided values were not valid: You can't launch a platform event-triggered flow from within Flow Builder. To launch this flow, activate it and then publish an event message for the platform event that's configured in the Start element."

This is a platform event triggered flow so it will be running from the flow builder so you just need to activate it and whenever any kind of an event will occur as we have discussed in the video, how we have generated a flow error from the screen flow.
Need Help:
For me everythings works fine but the record is not getting created after the error. I've shadowed your process completely and rechecked everything. I dont't know why!
May be because rollback mode is on, when you are Debugging this, also, flows are not active.

Try this: Setup>User Interface>Tabs>Custom Object Tabs>New> add Error Logs. It should be visible.
