Looks like you skip the transcription step completely and just play by ear?

For sure (sry was meaning to write, forgot to reply your comment back then). Hope you don't mind a passage long response!
So what I'd say would be 50% of finding ways and 50% of the constant repetition. The few ways I find helpful are like by ear, there's a site I used to depend on called Chordify that provides chords to whatever youtube video you desire playing. Then I start to get use to it on my own and use it whenever I needed reference
As for memorizing, I always break them into verses, pre choruses and drops and so forth, generally any segment that has a similar pattern. Patterns make it much simpler to memorize. The more u use this technique, the faster & smarter you'll be recreating them on piano.
Transcribing may be accurate however I find that a bit too time consuming especially in the youtube game. It's always speed and the quality that comes first, especially if it's a pop song.
