INGREDIENTS
2 1/2 cup AP flour
2tsp baking powder
1tsp salt
100g butter
3/4 sugar
4 eggs
40g desiccated coconut
300ml buttermilk
2tsp coconut essence
2tsp vanilla essence
125ml cooking oil
Apricot jam
dried coconut chips
bake at 165 degrees C for 40 -45

Greetings from coconut growing Bangalore in india.
Love this recipe. Simple, no fancy ingredients. easy to make, and will be delicious.
I make a similar recipe with coconut. But use 2 eggs as I add curds (yogurt or buttermilk as you use). and I also add tender coconut water and pulp, along with dessicated coconut.
I make eggless version too for my veggie friends.
Both versions come.out well. I will try your recipe soon, with 4 eggs.
