Chicken with tomato sauce, mushrooms and garlic

  • Chicken recipe with tomato sauce, mushrooms and garlic - a simple and fast food. Ingredient:
    • 800 g pieces of bone-in chicken
    • 300 g of mushrooms
    • A large onion cut not very small (100g)
    • 4 large cloves of garlic
    • 100 g of concentrated tomato juice, if possible at home
    • 300 ml of water or chicken soup
    • 400 g of diced tomatoes
    • A teaspoon of capsicum broth
    • A few tablespoons of oil
    • Ground black pepper
    • Salt
    • Optional dry thyme
    • Green parsley
    We choose for this dish a spacious and stretchy pan, if possible with thicker walls.
    Put it on the fire, let it heat up, then add 2-3 tablespoons of oil. Add the chicken pieces, skin down. Let the chicken fry, over low heat, until it browns nicely on all sides. In the meantime, we take care of the mushrooms. Wash them quickly, and cut them into suitable pieces.
    After the meat is nicely browned, take it out on a plate.
    Add a little more oil if needed, but usually not needed, and add the chopped mushrooms. Heat a little, then add the thinly sliced garlic cloves and onion. In a short time the mushrooms will leave the juice, and the onion will not harden but rather will boil in the mushroom juice. Add chicken soup. If you don't, use water, no problem. Return the meat to the bowl and simmer for about 10-15 minutes or until everything is well penetrated.
    Then add the fresh tomatoes and concentrated tomato juice and let it cook for another 5 minutes. At the end, season the sauce with a teaspoon full of capsicum paste, a teaspoon not very full of ground black pepper, salt to taste, and optionally dried thyme. After extinguishing the fire, sprinkle with chopped green parsley and serve!
