It's Kihon Waza Keiko Ho not Kata and as so they're not announced as Ipponme...etc, it's as if on the Kata side we announced Men Nuki Men instead of Ipponme which would be wrong and so is your editing, the correct wording is the one that Djax Up posted, even Bennett sensei commented to tell you so, please re-edit your video with the correct wording, rei.

We always announce them like this:
Kihon Ichi - Ippon Uchi no waza - shomen/kote/doh/tsuki - hajime!
the four basic strikes with proper Zanshin
Kihon Ni - Ni-Sandan no waza - kote-men - hajime!
kote-men strike / renzoku waza
Kihon San - Harai Waza - Harai-Men - hajime!
push/slap aside bokuto and strike men
Kihon Yon - Hiki Waza - Men-(Tsubazeriai)Hiki-Doh - hajime!
Men blocked by Motodachi - move to Tsubazeriai - strike Hiki Doh
Kihon Go - Nuki Waza - Men-Nuki-Doh - hajime!
Evade Motodachi's Men and strike Doh - both Moto and Kakarite now do Zanshin after the technique. Valid from now on for all forms except 7th/debana
Kihon Roku - Suriage Waza - Kote-Suriage-Men - hajime!
Motodachi strikes Kote, Kakarite pushes the bokuto to the side while setting up his men strike, then strikes men
Kihon Nana - Debana Waza - Debana-Kote - hajime!
build up pressure, strike a small sharp kote instantly when Motodachi begins to move. Only Kakarite does zanshin!
Kihon Hachi - Kaeshi Waza - Men-Kaeshi-Doh - hajime!
Motodachi strikes Men, Kakarite waits until just before the strike hits and then performs a block and immediately strike Doh
Kihon Kyu - Uchiotoshi Waza - Doh-Uchiotoshi-Men - hajime!
Motodachi strikes Doh, Kakarite strikes down on the incoming attack while moving back/left and then strike men

They are not called Ipponme , Nihonme etc as in Nihon Kendo no Kata.
It's called Kihon Ichi, Kihon Ni, Kihon San etc.

what is the deal with the white gi? does it mean anything compared to the dark blue variety?
Personal preference.
In the west it's usually more seen on women or experienced kendoka.
From what I've heard, kendoka in Japan are less rigid about this though.
Kata 1-
Men, Kote, Döu, tsuki.
Kata 2-
Kote Men.
Kata 3-
Disarm, Men.
Kata 4-
Men “false”, Touch Opponent, Döu.
Kata 5-
Edvade Men, Döu
It is not kata. It is Keiko-ho. There is a big difference.
