    Storing half-raw chicken for a couple days and then using it to cook later is not something you need to really “find out”.
    Call it nitpicky, all you want. It’s dangerous and incomprehensible.

    I always wash my stuff before I cook it...especially mushrooms..but does everyone?

      You’re not supposed to wash mushrooms, but you should wipe them off with a wet cloth because they grown in dirt and usually have a lot of dirt still on them.

      You shouldn't wash mushrooms at all, if you do and bake them they will release a lot of water and you don't want that, only brush them off.

    I was happy to wake up to a Kandy cooking video...watching you cook is very enjoyable and relaxing to me and a great way to start my day! Every time I watch you cook it inspires me a little more each time to want to order one of the food boxes you've done in the past...I can't remember the name of the box, but I have it saved in my favs in case I do get brave enough to try it, hahaha!     When cooking southern/creole food, Tony Cacheres is life. I put it in everything. But I cheat when I cook gumbo or jambalaya and just use the box of Zatarain's with whatever meat I want.

    Yes for the mushrooms! If you're using precooked chicken in a soup, mushrooms can add a richer taste to the broth that may otherwise fall flat. But but but where's the Okra? It's good veg, it isn't carb nor calorie heavy, and it actually helps thicken the gumbo. Ooh. I want those snacks. I thought of Kix as soon as I saw them. I get toddler snacks sometimes, like yogurt melts for sweet snacks, and little veggie puffs. 😅

    Slow Cookers/Crock pots are great but they never thicken up or reduce down, I tried doing a stew in mine but it came out much better in a big saucepan.

    Hi Kandy, I started lazy keto 8/7/18 , It is hard but as you go along and meal plan for the week , that seems to help alot. I am still learning but I wish you luck. I keep track on myfitnesspal and keep my carbs under 20 as all the videos i follow. Lets work on this together, it is always better in two's then by yourself. Cheer up --life is hard but when you have loving support from friends and family the journey gets better.....

    Honestly, I prefer this type of cooking video from you because it's easier for those of us who have kids and families, that do get in the hum drums and can't think of other meal plans. Thanks for doing this video because it gave me more ideas of ways to change up my dinner meals and make things that are different and not of the normal style.

      Not being a hater, honestly, I love her video's. It's important to wash them to get some of the chemicals and pesticides off of them. I used to not worry about washing organic then thought "hmmmmmm, I have no idea where these have been or who touched them" :-P

      You should know better....truely. 😒 Not properly cleaning food can make your foods taste and texture bad, it's hard to season and germs can make you sick. Some germs survive extreme heat and cold, thats how "superbug" germs are developed. They gain resistance to external and internal conditions.

      @@Pamela_Lang thank you all food veggies and meat travel and are man handled in several different conditions before they come to put local grocery. Not properly cleaning food can make your foods taste and texture bad, it's hard to season and germs can make you sick.

      It's not just germs you should be concerned about. The leading cause of parasitic infection in humans is unwashed vegetables and fruits.The parasites can lay dormant in your system for some time before the start to cause various health issues. Washing goes beyond just a rinse with water. I always fill my kitchen sink with organic distilled vinegar and water and let my food soak for a few minutes. There are also Veggie and fruit cleaning spray you can purchase.

    I have OCD and depression. Had OCD as a child and
    didn’t know it. Wish I had. I’m taking Luvox for both

    If you're having a hard time with eating vegetables I suggest investing in a nice blender! I add about 1-2 servings of leafy greens into my morning smoothie and I feel great! It fills me up and keeps me full for hours!

    I make a low sodium gumbo as well that’s delicious. I have to have some okra in it as well. I just add my brown rice in with the raw stuff and it cooks with it. We just at on it through the week too. I love my slow cooker & my Instapot. I’ve started doing my pork chops and chicken thighs (meat) also for meals with a meat & veg in my air fryer. The air fryer makes the meat crispy & juicy at the same time. I even do my turkey patties in it as well. That way I hardly ever have to use my oven & make the kitchen crazy hot. That last recipe looks good as well, but I’d need to find a low sodium version of the seasoning. Does that Johnny’s have a version??

    For all the mushroom washing people, stop! You don't wash mushrooms. You just need to wipe them down with a paper towel. Washing them just makes them absorb water and doesn't even make them cleaner.

    Funny. I made the same thing last week - love it...only I called mine Jambalaya. Is there a difference? LOL. I have been going down the "plant based" journey rather than keto...at least for now...bc I'm trying the gluten free thing for specific reasons (for me it's not a fad thing or a keto thing).. I think once I got focused on getting and preparing my veggies it has been easier and not THAT bad. I recently found those "salad in a jar" ideas and am going to run with it for my lunches in the future. For me, "plant based" doesn't mean no meat at all, but rather that I am trying to focus more on veg and have more all-veg meals. I've had a lot of experience with dieting....alas. Some success, some failure. It's always a journey!

      Gumbo is more of a soup/stew. Jambalaya is more dry. Gumbo has veggies. Jambalaya is usually just the rice and meat.

    Hi sweetie! If you're on keto diet you can't eat rice for the insuline spike! But if you're only reducing carbs try to choose better ones...like wild rice (bran,red,black). Kisses and keep going like this! (A tip...dont put frozen food in hot one..you create a temperature shock that will stop the cooking, defrost it before mixing up stuff, even to avoid to assume the frozen water that covers the product, the result will be more creamy and consistant). Tip n.2 wait that your prep is completely cold before putting it in the fridge or it will become acid. ♡

    you don't get heat from bell pepper seeds but you will get paper and dirt from your chopping board-wash ya veggies-at least wipe the potting mix or dirt off the mushrooms and always chop of a slight bit off the end of the stalk as it is hard from being in packet,there is a disease you can get from consuming potting mix

    Hi Kandy 🙋🏻. So pleased to see you back in the kitchen 👩🏻‍🍳. I just wish I knew why I sabotage every healthy eating plan I have ever done 🤷‍♀️. I lose a couple of stones and just subconsciously relax ( for want of a better word ) and go back to eating the crap again , quickly gaining back any weight I have lost and usually more beside 😟. It's a viscous circle , lose and gain , lose and gain ... I'm SO sick of it ❗️. I am a comfort eater and food is my coping mechanism , I suppose I will never solve my weight problem while my head is SO scrambled ❗️❗️. Your dish looks delicious 😋. Come and cook for ME Kandy 🤣.       Sometimes it can be an emotional reason and seeing a therapist can help. A lot of food issues can be traced back to childhood problems. I know mine are. I started being able to lose weight once I addressed those and constantly remind myself that i will always be able to feed myself and have food. I grew up with food insecurities, aka not enough food in the house. Now I do intermittent fasting and it works well for me. I don't like to restrict what I can eat, but I can easily not eat for long periods of time. Find what works for you and stick with it! You can do it! I've lost 80 lbs and kept it off for 19 years!

      it is called the restrict-binge cycle. the solution is intuitive eating. you can check out intuitiveeating.org for more info on this... the diet approach will always result in this. you cant control yourself forever... we are not wired for restriction, that is why our species survived. anyway, i wish you peace with food. you deserve it!       @@ginbo33 thank you for bringing this up! I haven't started reading the book yet but it's on order. I have several chronic aliments, and as a result an in constant pain. I grew up with terrible eating habits as well, and had an issue with binging and purging as a teen. I lost 40lbs doing a 1200 calorie per day plan but it was so hard to maintain. Then the urges to binge and purge started, it scared me so bad to think I would go back to that again.
      Upon my last set of infusions at my Rhuematologist the nurses were talking about this book. They were nice enough to talk with me about it as well. I never thought of myself as an emotional eater, but after my diagnosis at 28 I started to gain a lot of weight. When my pain spikes I go for my comfort foods, chocolate and coke. I'm 43 now and my pain levels average around a 7 without the Norco. 5ish on the Norco, but Norco increases my depression. Then I need the comfort food. It's an awful cycle. Right now my body and I are in a battle. But a huge part of that battle is me learning to accept my emotions and how to cope with them properly.
      The nurses all love this book and feel it has really helped them face the emotional aspects. One nurse told me, she was learning it was ok to be sad, to stop and understand why she was sad, to cry if she needed to and then how to deal with that situation without eating it away. To me that is a very powerful lesson. I'm excited to get my copy and start reading it.

    I have a hard time eating enough fruit and veg. I finally started taking vitamin pills. I avoided them before because I had somehow convinced myself that I could certainly could, and certainly would, eat my five a day. You can guess how that has worked.... so definitely not the best situation but my skin is looking a whole lot better

    I am on lazy/dirty keto and I will be makin that gumbo! Looks so good! I'm gonna make that oven roasted veggies and chicken but leave out the potatoes and prolly sub them with bell peppera for a more colorful pop

      The only neg if that i have to say about the video stems from my OCD. It went all over me that you didnt remove all the seeds from the bell pepper LOL It's my own personal issue where I have to get each and every seed out. 😔

    If you want to say you're trying to go low carb that's fine but don't say you're Keto because keto is only 20 carbs or less and 1/4 of your potato would be that we don't eat potatoes and rice where we get our carbs is in just some vegetables keto sounds like a diet that you might like to be on although you couldn't have pizza from a pizza place but you could make your own cuz it's about more meat and fat than it is vegetables

    Loved the video, but I have only one critique nothing negative just informative...
    All bell peppers or the seeds they are never hot they are sweet, esp. the red ones are very sweet. All other "peppers" have different levels of heat in the seeds only then you can go to the point as where the whole thing is hot, seeds & the pepper as well.
    I would love to give you a true recipe for the crockpot if you love real gumbo, being 75% cajun from La. I think this is one of the first thing were taught to cook... LOL A true gumbo has what is called the trinity in it which is onions, celery, and green bell peppers also it has what's called a rue which is where the gravy comes from for alot of the flavor. That would of been made with the sausage dripping... yummm.... sorry had to add that in... LOL Adding a bay leaf also helps increase the flavor as well(just remember to remove it after cooking). Good luck on your weight loss journey i'll be cheering you on as I'm on my own journey as well. So far down 32 lbs in 8 weeks but a whole lot more to go, it's like a year long sprint. I've been very sick for awhile, and now I'm in the middle of getting weekly infusions(yuck) 6 down 6 to go then I hope I get where I feel good enough to get out and get back in the pool.     When I prep for the week like this I like to take all the veggie scraps and make a stock out of it. So much better than store bought and it puts all the scraps to use. Just put it all in a pot, put enough water to cover, bring to a mild boil then turn it to low for a couple of hours. I do it in the instant pot for an hour and call it day day. Can be turned into a soup or frozen if you're not going to use it right away. Love the cooking video's Kandy, ty!
    Edit: if I don't have enough veggies for a stock, I put them in the freezer until I have enough! :)
