About the way I cook steaks on my PK. I'm a bit slow, so a couple of thing aren't clear to me. (1) Do you season on one side and the edges? (2) Lid open or closed when searing?
Great video. How do you get your "Grill Grates" not to slide when you are scraping them on the PK? Are you attaching them to original cooking grate somehow???

Most of the rubs I try with MSG are really good. Chupacabra brisket magic comes to mind. I can use it on every beef cut and it brings something to it.
