I'm one of them lol, I have to paint the inside because my coop isn't made out of wood, it's steel reinforced block and concrete, a grey stucco wall looks horrible without paint.
I'm panting the inside of my coop, grey concrete looks horrible, OSB panels are used to build coops, Paint can't be as toxic as the glue used to make these panels.
Look into OSB panel board, look into the resin used to put those panels together, exposed osb panel affect respiratory tract in humans, chickens are more sensitive...I'm in general construction, you might want to paint your coop if it's made from osb panel
