I think that Pibb Xtra is basically chocolate cherry flavor. I have thought that for years. I also love almond extract, and tried to make home made soda out of it, and that's how I figured out that it's in the right direction for Dr. P/Pibb.
I'm old enough to remember when Dr Pepper was only available in the US. Being my favourite soft drink, when I was younger I used to look forward to having it either on the plane to Florida for a holiday, if we were flying on an US airline or getting one from the vending machines at the car rental places. I'm sure many people also remember that soda cans used to be much bigger in the US than in Canada and that it was probably only in the early '90's that they increased the size of Canadian cans.
The standard Australian can is 375 ml. I was disappointed with an imported can as I was expecting to take an extra mouthful or so. 330ml vs 375ml can size.
I feel distinctly unsatisfied, even frustrated by having to merely observe something I really should be experiencing in person to fully appreciate, that said you do a great job of describing your experience and I enjoy watching you get there.
Hello from Winnipeg! You know what I appreciate the most about your videos Glen? You start off with a proper ‘welcome friends’. Personal pet peeve: when people say ‘what’s goin’ on guys, what’s up people, or something similar.’ Great videos, always researched and informative...keep up the good work. Thanks.
Just a couple of observations of my own: When I smell the actual drink, I detect a floral note like rose. Also, you have to remember that Dr Pepper originated in a small Texas city around the year 1885. So I don't see how the drink could contain any fruit or fruit juice since these are perishable and would likely not always be available throughout the year in that era.
I'm curious as to the 'method to your madness' in choosing ingredients. It looks (to the uninitiated) that you're just throwing a ton of stuff together and hoping for the best. You are working off a base recipe that you modified. I'd love to know the rationale for your choices given the exotic nature of your ingredients. Your videos are very compelling, and I'd love to know more about the thinking behind the actions. Thanks, Glen. Keep 'em coming.
I looked at all the lists of what people think is in it, and a couple 'hack' recipes - tried them, and then started making changes to get to this point. It really is a crapshoot, with lots of mistakes, before you get on the right track.
Ha, I'm glad someone else brought up the almond/cherry thing. I like almonds, but I can't stand almond flavoured things like marzipan. For years anytime I've tasted something that was labelled as 'cherry flavoured', it's always tasted strongly of almond (not the nut itself), and hence I don't like it. I'm usually told that I'm insane for thinking they taste alike.
secritwen nah, it’s pronounced as it looks Irn Bru = iron/ion Brew/Bruw It’s damned good stuff (at least before the fucked with the recipe and dropped the sugar content, damned uk sugar tax) Barr’s Irn bru is the stuff of gods. Or, Lucozade original... OMG yum. (Again before the recipe was messed with)
In my early drinking years, I was introduced to a drink called a Dr. Pepper. It was a mug of beer with a shot glass of Amaretto sunk to the bottom. It's ment to be drunk in one go. When you burp afterwards, it tastes like Dr. Pepper. I'm not sure what you should do with this info but there it is.
Eliana, I heard that was true about those fake sugars being terrible for your health. I've stayed away from them. Thanks for the reminder and advice as I'll continue to steer clear of them. :-)
Thanks for all the recipes, inventiveness and inspiration. I make my own kombucha and tired making cola kombucha loosely based off of your recipe. Doesn’t really taste like cola but is good none the less. Trying your Dr Pepper recipe for kombucha right now. Experimenting is half the fun in the kitchen (much to the chagrin of my wife). Look forward to more vids and recipes. TY
The ingredients I found the most interesting were the "fruits" like raspberry and cherry. I also don't drink it often, but I am a fan of Dr Pepper. When you were making it, I guess I was thinking that I didn't associate Dr Pepper with the fruity flavors. Can't wait to see how you tweak it. Thanks.
So, this was the first one of your "pre-epidemic" videos that I have watched in weeks, and all I could think was, "Holy cow, look at all those ingredients!" Hahaha, thank you for this video!
You certainly have a point about the similarity of almond and cherry flavouring. I tried making cherry ice cream once using preserved cherries in maraschino syrup: It was essentially soft pink marzipan ice cream. No hint of cherry about it at all. Fortunately I like marzipan, so I ate it anyway, but it wasn't quite what I expected it to be.
you forgot, or didn't know about, the secret ingredient in Dr. P. My grandpa used to be around back when soda jerks made the stuff and he told me Peach Pit is what makes Dr. P have its unique flavor.
CW Hallway Productions I guess if the compound is made artificially it wouldn’t contain the proteins, but I don’t know. If the flavours are from natural compounds there could be some contamination of the proteins, but yeah you’re probably right.
Pardon me if this was asked already but have you tried Dr. Pepper made with cane sugar? The one you get in stores is sweetened with HFCS. I used to live in Texas and at one point there was a bottler there that refused to used HFCS and only made it with cane sugar (it was called Dublin Dr. Pepper since it was made in Dublin, Texas). It tasted noticeably different that the HCFS variety. Better, in my opinion. Much better. Unfortunately corporate eventually was able to stop the Dublin bottler from using the cane sugar. AFAIK, real Dr. Pepper isn't available anywhere now. A total shame. But, it's possible the difference in flavor is due to the different sweetener used. Perhaps use HFCS as the sweetener next time to rule out the sugar being the difference?
@@josephvolz8674 But... but... I NEED this. I'm diabetic. Diet Dr pepper tastes like crap. They've discontinued Dr pepper 10. Making it myself is the last possible option. (And yeah, I do make my own soda.)
@@AustynSN sir, i respectfully disagree with every point in this statement. Diet Dr pepper is delicious & the only good diet soda, barring maybe the new diet Coke. Which is only slightly worse than regular Coke.
When I was young (about a hundred years ago!) my mom would serve us hot Dr. Pepper with a slice of lemon on cold days - It was really good and really tasted different from cold Dr. Pepper. It might be interesting to try a comparison of the drinks heated up - might give you some clues as to the makeup.
Is there an update on trying to perfect this recipe? I just stumbled across this channel and have been watching some videos and can’t seem to find a second Dr. Pepper video.
Would it help to have not pre-sweetened the syrup? I feel that being able to adjust the sugar level helps adjust the end flavor. I know that with certain drinks, more sweetener will help with the flavor while other drinks suffer.
The only way you can get close to the original taste of Mr. Pibb is by going to a Braum’s Restaurant/Fresh Market they sell a 12oz Cans or 2 Liters of a Drink called "Braum’s Special" if you had to rate it to the closeness it's about 70~75% close to the real thing. The interesting thing is they will only open new stores within a 300 mile radius of Tuttle, Ok
Hi Glen. 2 things. You CAN get Pibb Xtra in Canada. It's available in coke freestyle machines. A Wendy's near me when I lived in Canada had one. Secondly, try and get some real sugar dr pepper to compare with the recipe. Previously I had only seen it in Texas, but I found some imported here in Australia recently. It's lovely and distinctly different from the regular stuff.
Part of the classic need for all that sugar is as a preservative and stabilizer. Since anything you make at home will need refrigeration and have a relatively short shelf life, you could theoretically make it completely without sweeteners, and have drinkers add the sweetener they like, such as a sugar syrup or monk fruit extract.
@@JackHudler Yes everybody knows that. He's asking Glen to make a video about drinks with sweeteners instead of sugar. He isn't asking if you can have sweeteners in soda lmao
@G W I would've loved to try that as a Pepsi fan. Coca Cola has a similar thing called Coca Cola Life, only sweetened from Stevia. But I haven't seen it in a while where I am, so maybe that got discontinued as well
deIlluminati Coke 'Life' in the green can is still available here in our part of Canada, and I saw it last summer in small town Arkansas when visiting family. So it's still being made in some places. At some point we'll work out versions with low to no sugar... but it's a long slow process, especially on a shoestring budget.
I'm not sure that the follow up video to this where the formula is tweaked ever happened, so I'm just gonna give a little poke here and see what happens.
I wonder if you tried to match the orginal DP from Texas with your recipe it might be easier to discern the different taste. I find corn syrup makes it difficult for me to identify subtle flavor note. I'm a Dr. Pepper lover so I'm excited for this series of videos. Consider ordering a case from the original factory in Texas.
Great videos! I never taste wintergreen in dr. Pepper. I was gonna suggest phosphoric acid, it has a cola taste in water, but you got it! I think where we go wrong in old soda fountain drinks, is that we don't realize that they were basically what kids call suicides, where all the drinks and flavors at fast food restaraunts are put in one cup as a joke to see if it will make one gag. Corner drug stores in america had two arrays of flavors they used, one set of flavors were ice cream toppings, and the other were candy flavors to add to liquid drugs to get kids to swallow the bitter medicine. Also, a few stomach aides, like phosphoric acid and carbonated water. What we need to do is find out what their common arsenal of flavorings were and work from there. Also, when we were younger, sodas tasted better, they have skimped on flavors since the end of the '80's.
Robert Wheelock I made a similar connection when I tried Mr pibb for the first time after I had been a fan of dr pepper for years, the pibb can was labeled as a spiced cherry beverage in small print by the FL oz indication.
Sounds dedicated... You know what I would do? I would run a Gas-Chromatograph Mass-Spectrometer to characterize the existence and incidence of various chemicals. You should be able to identify the spices, fruits, etc. involved along with having a pretty good idea of their concentrations. I applaud the dedication, but science has come up with an easier way ;) It's not too expensive a test to run at a local lab.

We got 12 oz & 16 oz cans
I love Jules hair in this episode. Glen, thank you for all your hard work. I really enjoy your channel.
If anyone could crack the Dr Pepper code it’s Glen!! 🙏
DrMario Pepper Your pic is hilarious
I feel distinctly unsatisfied, even frustrated by having to merely observe something I really should be experiencing in person to fully appreciate, that said you do a great job of describing your experience and I enjoy watching you get there.
Hello from Winnipeg! You know what I appreciate the most about your videos Glen? You start off with a proper ‘welcome friends’. Personal pet peeve: when people say ‘what’s goin’ on guys, what’s up people, or something similar.’
Great videos, always researched and informative...keep up the good work. Thanks.
What's goin on UA-cam
Just a couple of observations of my own: When I smell the actual drink, I detect a floral note like rose.
Also, you have to remember that Dr Pepper originated in a small Texas city around the year 1885. So I don't see how the drink could contain any fruit or fruit juice since these are perishable and would likely not always be available throughout the year in that era.
They would be available as syrup though. Not fresh of course.
Yes! Been waiting for it ever since you posted the teaser!
Ohhhhhh I love it, I just sent you a question on another post, and you have answered the details within this one!!!!
Well madness is related to dr p, throug mad scientists
11:39 dude don't be sad :( you gave it your best effort!
Used to have a recipe for a nice almond cherry cookie. They play well with eachother forsure.
It’s 3 am. I don’t know why I keep watching this. But it’s amazing.
If you try to make Irn Bru I can tell you this, it's made in Scotland from girders.
Unpronounceable, too.
secritwen nah, it’s pronounced as it looks Irn Bru = iron/ion Brew/Bruw
It’s damned good stuff (at least before the fucked with the recipe and dropped the sugar content, damned uk sugar tax)
Barr’s Irn bru is the stuff of gods.
Or, Lucozade original... OMG yum. (Again before the recipe was messed with)
I am from Colombia and we have Colombiana and it tastes just like Irn Bru,probably came from Scotland many many years ago
3:08 when you boil that it must smell amazing!
We used to add a layer of 151 rum to that amaretto, light it on fire and called them Flaming Dr. Pepper.
What type of beer? Lager? Ale?
Collect the burps, distill and add to carbonated sugar water, BAM! Incredibly gross Dr Pepper
@@zaraak323i absolutely.
Memories of college.
There’s a new seltzer water with "A taste of the doctor." In it. Taste spot on just not sweet.
Nice 👍 You should attempt irn bru at some point😂
Yesss iron bru would make my week
Yes!!
The trouble would be finding an original recipe can to taste test against
Another vote for Irn Bru
Irn Bru tastes like Circus Peanuts (candy) but my wife will never admit this! Nor will I say this in front of her! 🤣 Weegies scare me! 😟
I think there is fig syrup in it. At the time figs were used for a lot of remedies. Also it tastes like the Italian ham glaze I make with fig syrup.
Holy dentures, that's UH LOT of sugar!
I think i got diabeetus just from looking at that level of sugar!
It's the equivalent of 1 tsp of sucrolose.
does soda REALLY have THAT much sugar?? Because... wow.
@@keth8947 Yes, unless you get diet which has Sucralose and aspartame which are waaaaaaaayyyyyyyy worse than sugar
TY
The be never been a person to watch cooking shows but I like yours a lot Glen. You have my attention unlike the others.
I am totally hooked on dr pepper!!! Very interesting video!!
Thanks.
It has a really strange flavour profile, it’s going to be a tough one to crack.
So, this was the first one of your "pre-epidemic" videos that I have watched in weeks, and all I could think was, "Holy cow, look at all those ingredients!" Hahaha, thank you for this video!
I always thought cherryade (and Dr pepper) tasted of marzipan. Glad I'm not losing the plot 😋
You certainly have a point about the similarity of almond and cherry flavouring. I tried making cherry ice cream once using preserved cherries in maraschino syrup: It was essentially soft pink marzipan ice cream. No hint of cherry about it at all. Fortunately I like marzipan, so I ate it anyway, but it wasn't quite what I expected it to be.
this video is just what the doctor ordered
you forgot, or didn't know about, the secret ingredient in Dr. P. My grandpa used to be around back when soda jerks made the stuff and he told me Peach Pit is what makes Dr. P have its unique flavor.
My sister would be able to tell the difference between the almond extract and cherry extract... because she’s severely allergic to nuts
Almonds aren't nuts
Why does she blow up like a balloon then?
Allergic to almonds
Would you please try Irn Bru? That would be awesome.
You said in a couple weeks, its been at least 10 months, so when is part 2 up?
I'm getting the feeling that this is an abandoned project.
@@AustynSN lol Dr Pepper kneels for no man.
@@josephvolz8674 But... but... I NEED this. I'm diabetic. Diet Dr pepper tastes like crap. They've discontinued Dr pepper 10. Making it myself is the last possible option. (And yeah, I do make my own soda.)
@@AustynSN Diet _cherry_ Dr. Pepper is perhaps the only full diet soda I can stand. It's too bad about the aspertame, it destroys me...
@Mary Grace nah I could see it. Dr pepper has a calming flavor that could lend well drinken hot. All hypothetical of course, it could be disgusting.
@Mary Grace never tried it but it was marketed back then for a bit that you can drink it hot or cold!
Good tip.
@Mary Grace What he describes is the exact way that Dr Pepper was originally intended to be prepared.
I prefer frozen but to each their own
Is there an update on trying to perfect this recipe? I just stumbled across this channel and have been watching some videos and can’t seem to find a second Dr. Pepper video.
Would it help to have not pre-sweetened the syrup? I feel that being able to adjust the sugar level helps adjust the end flavor. I know that with certain drinks, more sweetener will help with the flavor while other drinks suffer.
yeah - making a simple syrup separately and then combining is a great way to do things ( I do that in the background).
Really enjoying your videos! Thanks so much for all you do!
I expected there to be some caramel flavouring involved. Could that be missing?
I am now a friend of Glenns. Just because I like his friendly demeanor. Thank you Glenn for being you! 👍
**sees ingredients**... okay, are we making dr. Pepper or cook some chinese cuisine?
Not able to find any follow ups to this, nor any Moxie experiments, from your channel's page - would love some links!
I would love to recreate the original Mr. Pibb. I hate their Pibb Extra.
couldnt agree more!!! the original mr. pibb was fantastic!!
I didint know that their was a mr. Pibb original. Ive only ever seen the pibb extra.
"It Goes Down Good"
The only way you can get close to the original taste of Mr.
Can you try making a “diet” soda sweetened with something like stevia or an artificial sweetener?
@@JackHudler I think he was asking whether Glen could make a video on creating a diet soda, rather than whether it is possible or not.
Such a relaxed down to earth guy. Love the videos man!!
We’re they at the same temperature when you tasted them? I always feel like colder soda has a little less flavor.
Lol it’s funny just watching them keep picking up different cups and drinking randomly
I find it so amazing that Dr. Pepper alone is the one soda everyone is struggling to replicate. I know you'll break it someday, though!
You should also do a Moxie knockoff clone-Moxie is Mane's favorite soda pop.
Vim - The taste of Maine
I LOVE wintergreen berries in the wild!
The Dr. Pepper-like flavor is based on black cherry cola, blended with a bunch of other flavors.
Robert Wheelock I made a similar connection when I tried Mr pibb for the first time after I had been a fan of dr pepper for years, the pibb can was labeled as a spiced cherry beverage in small print by the FL oz indication.
What a witchy little brew you have going, I am so excited!
Now that the KFC project is wrapping up soon, any chance of reviving the Dr Pepper recipe? This one is fascinating.
They most likely used powdered ingredients dried powdered raspberries maybe raisins vs prunes
For me it always tasted quite like a cherry cola, with a weaker cola taste.
I knew nothing at all about how different sodas are made. Very interesting.
Sounds dedicated...
You know what I would do? I would run a Gas-Chromatograph Mass-Spectrometer to characterize the existence and incidence of various chemicals. You should be able to identify the spices, fruits, etc. involved along with having a pretty good idea of their concentrations.
I applaud the dedication, but science has come up with an easier way ;)
It's not too expensive a test to run at a local lab.
Love to see more stuff like this!
Welcome Glen
