Traditional Italian Meat Sauce
Growing up in a large Italian family, I learned from an early age about what goes into a great meat sauce. Thanks to my mom, dad and aunt Rosie, I am happy to share this family tradition with you! Enjoy!
Ingredients:
1/3 cup of olive oil (from Italy)
1 pound of ground Angus beef or lean sirloin
1 pound of sweet Italian sausage taken out of the casing
1 medium sized yellow onion (chopped)
4 cloves fresh garlic (minced)
1/2 teaspoon of crushed red pepper flakes
8 to 10 fresh basil leaves or 1 tbsp. dried basil
Salt and pepper to taste (keeping in mind how much salt is in the canned tomatoes and also in the sausage meat)
3/4 cup of red wine (Merlot or Cabernet Sauvignon) (also you can replace it with beef broth or leave it out)
2 whole peeled carrots
(* Fresh oregano or 1/2 teaspoon dried)
* Optional
2 cans of San Marzano style peeled tomatoes in purée with basil
1 can of San Marzano purée
1 6 oz. can of tomato paste
Note: 2 large vine ripe heirloom tomatoes or one pint ripe grape tomatoes cut up into small pieces can be thrown in for more fresh tomato flavor.
*Sugar if needed
Instructions:
1. Heat olive oil in a 5 quart Dutch oven pot over medium heat. Add ground beef and sausage, cook breaking it up with a wooden spoon, until meat is just done.
2. Add onion and garlic to meat and sauté stirring occasionally until the onions are translucent, about 3 to 4 minutes.
3. Stir in the red wine and let simmer for about one minute until mostly evaporated.
4. Add all of the cans of tomatoes, (plus fresh tomato if using) to the pot, keep stirring to incorporate. Bring to a boil and then reduce to a low flame ( make sure it is a light simmer) . Add the carrots and red pepper flakes, stir and place the lid on the pot slightly ajar. Simmer for three hours stirring occasionally.
5. After 3 hours, taste and add the salt, pepper, fresh basil and oregano. Cook for another half hour and remove the carrots. If you feel that the sauce is still tangy, add 1 tsp. sugar or more to taste.
* Serve with your favorite pasta. Use as a base for eggplant Parmesan or lasagna. This sauce can also freeze for up to three months.
Enjoy!

I used this recipe to make cannelloni… it was the best cannelloni I’ve ever had. My family and friends LOVED it! I’m back now getting a refresher for Lasagna tomorrow!
Yay I am sooo HAPPY 😃 to hear this !!! Enjoy and share it with all your loved ones ! This is a family treasure!
There is nothing better than a homemade italian meat sauce. I once bought a whole case of italian tomatoes and blended them up. I had two huge pots going for a few hours and cooked it down. By the time it came to putting them in jars, I ended up with about 7 large Ball mason jars. My sauce tasted almost as good as the family used to make.
My dad's family always made sauce in August. They had a special machine to grind and remove the skin and seeds. They would produce huge batches in large aluminum tubs outside in the backyard. They would cook it for hours throughout the day on special gas stoves that hooked up somehow to the inside gas lines. They left the sauce unseasoned aside for a single basil leave per jar at canning time, so that the family could season when using. Each family member would bring home 10 - 20 jars to last all year. Thats a huge amount sauce for a large group of family members.
netsendjoe yes my friend !! Those are some beautiful traditions in our Italian Family!!! Such wonderful sauce and memories for generations to come ! Enjoy ❤️👩🏼🍳😌🙏🍷
I used this recipe last month and my daughter loved it!!! Thanks
So happy to hear this ! Thanks for sharing 😇❤️
This sauce is a fantastic base!! Right on with the San Marzano! I feel like this would be absolute perfection in a lasagna.
Draaco Pendragon thanks so very much !! It really is ! I use it a lot in my lasagna and eggplant 🍆- thanks for watching ! 😉👌❤️👩🏼🍳
Looks gorgeous! Wow. Thankyou.
The only thing I do differently is cook that grey liquid off from when you brown the meat. Depending if your meat is 70/30, 80/20, 90/10. I almost let the meat fry until it starts making crackling sounds and you have to stir so it doesn’t get stuck to the bottom. I feel this adds flavour to the meat by developing almost a light crust. Careful not to let it burn, you have to stay with it.
I’m making this right now and my house smells amazing
That’s so awesome
This recipe looks BOMB AF!!
Eduardo Martinez thanks so very much ❤️

My pleasure! Enjoy 😊
Checking in again, Celine. I found I wasn’t remembering/reading my notes correctly. I do hope you have found a way to cope with life events you reported earlier. My wife passed away from cancer and my grief proved to be an obstacle that I needed help to get past. It has been an unsteady time for me, and I’ve done some things I regret; but I’m feeling stronger now. I am looking forward to a better year in 2023, and I hope you find some blessing in it too.
that sauce look soo delicious
Thanks so much! Happy New Year
Love it! Looks very delicious. When you serve at the table do you combine the sauce and cooked pasta in one big bowl or do you keep them in separate bowls for the people to mix? I would like to just add the pasta to the Dutch oven and set it at the table but I don’t think you can fit the pasta into that Dutch oven.
New subscriber, love the recipes!
Thanks so very much! Welcome aboard my friend 🥰

It felt watching this video that I was part of the family. Very nice put together video. 🙏
Wow thanks 😊 god bless you and enjoy !
I'm going to try again with San marzano and a richer , or really goodolive oil. I did the part of squeezing the Roma tomatoes, canned, as mentioned, never really have I done before. I did not have chili peppers, but I could have added dried red pepper. I wasn't sure how many fresh basil leaves to add. I likely out several. I enjoyed your soft-spoken voice , too. We are from Toronto, Canada.
I am very happy you are enjoying this video and recipe ! Makes me feel so good !
Love Making Different Style Tomato Sauces. I used Different Beef & Pork bones In mine. Love Watching Your Video's.
Linda Fraser Many Thanks for watching !! Love the flavor the meat bones give to the sauce ! Enjoy 👩🏼🍳👌🇮🇹🥰🍅
I've been thinking about incorporating san marzanos and Italian sausage in my sauce, after seeing this video I'm convinced I need to try it out. The sauce looks delicious. Great quality video and easy to follow instructions. I'm subscribing.
InsaneTribe many thanks and welcome aboard! You can’t go wrong with these ingredients, 😉👩🏼🍳🌿 trust me ! Enjoy & Stay well ...
And now I’m starving.
A blender will introduce a lot of air into your tomatoes, they’ll get real foamy and, if you’re not careful, watery.
Also, props to the camera-person! ❤️
You are absolutely beautiful! Thk u I am going to make this sauce! I want something like Raos I am now subscribed ❤
Thank you kindly 🥰Enjoy !!

It’s will be perfect with the hot sausage
Just followed this recipe but substituted in some hot ground sausage instead, also threw in some green peppers! Thanks for creating an easy, informative video on the recipe. You really nailed all the steps for us less blessed in the field of cooking. 😂
Awe ! So happy to help ! Enjoy and thanks for sharing your tips ! 🥰
Do you have to use the puree, what about just the paste and peeled tomatoes ?
Nice recipe aunty
Now, that is probably going to taste even better two days afterwards if stored in the fridge and just heated up.
What a Delicious Meat Sauce Celine, love the combination of Beef and Sausage!!!
Ellen's Homemade Delights thanks so much my friend !! Always love 💕 to share with you !! Love your Tres leches cake 🍰
The Recipe Therapist Many Thanks! 😘
Wow i remember aswell begging my mother to let me eat a bit of the meat source with bread before everything was done 😄
Wow that is awesome ! Thanks for watching ! Enjoy
Hi , What can I use instead of red wine? Your Sauce looks amazing BTW 😊
Beef broth ! I cup dear
I am now very hungry. Kudos to your cameraman.
Yay 😀 that’s what we want ! Thank you
Thanks for your video. Will definitely try this. Why add water though? Would it not be better to use a bit of beef or vegetable stock ? Another way to add extra flavor
Yes absolutely! You can add extra stock - but the water works if you don’t have stock ! Enjoy 😊
Na this looks amazing
Damion Ellis thanks so very much 🥰
I used central american sausage instead of the sweet sausage and it came out so dam good!!!!! Good recipe :)))))
I like that ! Awesome 👏🏾 Thanks for your support
Your psychic abilities are very keen.... I have been vegan for 10 years and recently started eating meat again and had no idea how to make anything and I said to myself, I hope Celine does a basic meat sauce recipe... Ta da ! haha Thank you!
Shari Ives OMG 😮 Shari that is Amazing!! Wow 👩🏼🍳🥰🌿👍
Well you are getting a real Authentic Italian Meat-sauce my friend - Enjoy this !!! Throw it over some Pasta 🍝- Eggplant Parmigiana or believe it or not a Green Salad 🥗 - It’s Delish !!
That’s exactly how I make my pasta and spaghetti.
Good looking sauce. Also, I know everyone has their own sauce recipe, but personally speaking, I let mine simmer for up too 10 hours. No less than 3 though. As Babish would say, gotta let them flavors get to know each other. Oh, and a near 3/4ths bottle of wine to get all the guest nice and liqure'd up.
I make my meat sauce with all the same things but I use an immersion blender to puree the tomatoes in their cans before I pour them into pot. This is not the traditional way but it allows for consistency. A a second gen Supinese man I learned many traditional dishes of the Supino region, AS it happens, these dishes are often the typical ones of many of these videos.
This was absolutely delicious.
Curious, could this be made without the meat for just a sauce and make cool meatballs/sausage in it?
Yes ! I would add meatballs and Italian sausage in the beginning! Slow cook 👩🏼🍳 it ams it will be very delicious! Enjoy and thank you for your your feedback!
Where can you get the pot you spoke of! Love the recipe!
B DeAngelo I will email it to you ! Or I left a link in the description box - which you will see a tiny arrow to the right side of the video / directly under the screen ! Press that and the recipe and link for the pot will appear ! If you are on your computer then press the show more button under the video and you will find the same thing ! Let me know if you need more help ?
William Sonoma,,le cruset. Outlet stores
Loved it. I letted the meat and onion/garlic to brown by not touching it (to avoid grey meat and lack of flavour). I also allowed the wine to reduce enough before adding the wet ingredient (sauce) further.
I also added minced lamb, then simmer (topping off with more water if the sauce gets too thick) for 8 hours. It was a bit on the thicker end like a Bolognese, but great recipe overall (especially the carrot and added sugar).
Thanks!
Wow love ❤️ it
Hi if you don’t want to use the wine what else can you use. Thank you
Hello 👋 you can use one cup
Of beef broth ! Enjoy dear ‘ 😊
Any idea how to use fresh beat up tomatoes for this? Aside from boil, shock, peel and blend
Neriedar I just cut them up into pieces and cook them down in some olive oil - sauté them !
I roast mine. Either in the oven, or I crank up the bbq, and roast then over the fire until the skins start to burst, and there’s a bit of char on the skins. You can peel off the skin, and have a nice slightly smoky flavour.
Do you drain any of the fat after the meat cooks down (step 1) before adding the onion?
No ! Because the fat adds so much flavor ! Enjoy 😉
Looking to make this for my sauce for stuffed pasta shells on V Day next week. I need to feed about 11 people. Any recommendations on amount?
Ronnie Blevins hello 👋 and welcome ! This pot of Sauce will be enough for you to use with the stuffed shells for 11 people ! I suggest a serving of two to three shells per person depending on the size ! 👍🥰Enjoy this recipe !
The Recipe Therapist Thank you!
🥰🥰🥰😋😋😋😋😋😋mouthwatering delicious 😋 😍 👌 😜 💕
Can i add the seasoning (basil/oregano/pepper flakes) in before the 3 hours of simmering?
I don’t but you can ! Or maybe 1/2 and then see how the sauce is coming along flavor wise after a couple of hours
here's a tip for getting all the tomato puree out of the can! if you pour in a tiny tiny bit of water, swish it around a bit, then pour it out, you can get a lot more of it a lot easier!
