Traditional Italian Meat Sauce ( Best Using San Marzano Tomatoes )

    Traditional Italian Meat Sauce
    Growing up in a large Italian family, I learned from an early age about what goes into a great meat sauce. Thanks to my mom, dad and aunt Rosie, I am happy to share this family tradition with you! Enjoy!
    Ingredients:
    1/3 cup of olive oil (from Italy)
    1 pound of ground Angus beef or lean sirloin
    1 pound of sweet Italian sausage taken out of the casing
    1 medium sized yellow onion (chopped)
    4 cloves fresh garlic (minced)
    1/2 teaspoon of crushed red pepper flakes
    8 to 10 fresh basil leaves or 1 tbsp. dried basil
    Salt and pepper to taste (keeping in mind how much salt is in the canned tomatoes and also in the sausage meat)
    3/4 cup of red wine (Merlot or Cabernet Sauvignon) (also you can replace it with beef broth or leave it out)
    2 whole peeled carrots
    (* Fresh oregano or 1/2 teaspoon dried)
    * Optional
    2 cans of San Marzano style peeled tomatoes in purée with basil
    1 can of San Marzano purée
    1 6 oz. can of tomato paste
    Note: 2 large vine ripe heirloom tomatoes or one pint ripe grape tomatoes cut up into small pieces can be thrown in for more fresh tomato flavor.
    *Sugar if needed
    Instructions:
    1. Heat olive oil in a 5 quart Dutch oven pot over medium heat. Add ground beef and sausage, cook breaking it up with a wooden spoon, until meat is just done.
    2. Add onion and garlic to meat and sauté stirring occasionally until the onions are translucent, about 3 to 4 minutes.
    3. Stir in the red wine and let simmer for about one minute until mostly evaporated.
    4. Add all of the cans of tomatoes, (plus fresh tomato if using) to the pot, keep stirring to incorporate. Bring to a boil and then reduce to a low flame ( make sure it is a light simmer) . Add the carrots and red pepper flakes, stir and place the lid on the pot slightly ajar. Simmer for three hours stirring occasionally.
    5. After 3 hours, taste and add the salt, pepper, fresh basil and oregano. Cook for another half hour and remove the carrots. If you feel that the sauce is still tangy, add 1 tsp. sugar or more to taste.
    * Serve with your favorite pasta. Use as a base for eggplant Parmesan or lasagna. This sauce can also freeze for up to three months.
    Enjoy!

      @@TheRecipeTherapist My sons family is vegan, how would I make this, that it taste just as good without meat. They do use Gardein crumbles or Impossible ground meat (the fake meat),I make your way for the rest of the family, but have to make a separate one for them.

    There is nothing better than a homemade italian meat sauce. I once bought a whole case of italian tomatoes and blended them up. I had two huge pots going for a few hours and cooked it down. By the time it came to putting them in jars, I ended up with about 7 large Ball mason jars. My sauce tasted almost as good as the family used to make.
    My dad's family always made sauce in August. They had a special machine to grind and remove the skin and seeds. They would produce huge batches in large aluminum tubs outside in the backyard. They would cook it for hours throughout the day on special gas stoves that hooked up somehow to the inside gas lines. They left the sauce unseasoned aside for a single basil leave per jar at canning time, so that the family could season when using. Each family member would bring home 10 - 20 jars to last all year. Thats a huge amount sauce for a large group of family members.

    Looks gorgeous! Wow. Thankyou.
    The only thing I do differently is cook that grey liquid off from when you brown the meat. Depending if your meat is 70/30, 80/20, 90/10. I almost let the meat fry until it starts making crackling sounds and you have to stir so it doesn’t get stuck to the bottom. I feel this adds flavour to the meat by developing almost a light crust. Careful not to let it burn, you have to stay with it.

      Ok I made the sauce. I made linguine with scallops and grilled asparagus. I even made garlic croissants too! The sauce was so delicious. Thank you so much. I'm not on social media but i wish you could have seen it. The plating was beautiful everything was exactly delicious. I was so proud of myself. I don't know how to even describe how I felt when my sister told me it was one of the best meals she has ever eaten. I was overcome with happiness.     The carrot trick is a game changer, thank you!! ive been making spaghetti the same way for decades and im glad to find out that i was doing it the right way! for those that dont/cant use wine: i use beef/vegetable stock instead and it turns out great. 3 of my kids are adults now, but their eyes still light up when they come over for dinner and find out im making this. will definitely subscribe, id love to learn more!! ❤

    Checking in again, Celine. I found I wasn’t remembering/reading my notes correctly. I do hope you have found a way to cope with life events you reported earlier. My wife passed away from cancer and my grief proved to be an obstacle that I needed help to get past. It has been an unsteady time for me, and I’ve done some things I regret; but I’m feeling stronger now. I am looking forward to a better year in 2023, and I hope you find some blessing in it too.

    Love it! Looks very delicious. When you serve at the table do you combine the sauce and cooked pasta in one big bowl or do you keep them in separate bowls for the people to mix? I would like to just add the pasta to the Dutch oven and set it at the table but I don’t think you can fit the pasta into that Dutch oven.

      I'm going to try again with San marzano and a richer , or really goodolive oil. I did the part of squeezing the Roma tomatoes, canned, as mentioned, never really have I done before. I did not have chili peppers, but I could have added dried red pepper. I wasn't sure how many fresh basil leaves to add. I likely out several. I enjoyed your soft-spoken voice , too. We are from Toronto, Canada.

    A blender will introduce a lot of air into your tomatoes, they’ll get real foamy and, if you’re not careful, watery.

    Thanks for your video. Will definitely try this. Why add water though? Would it not be better to use a bit of beef or vegetable stock ? Another way to add extra flavor

    Good looking sauce. Also, I know everyone has their own sauce recipe, but personally speaking, I let mine simmer for up too 10 hours. No less than 3 though. As Babish would say, gotta let them flavors get to know each other. Oh, and a near 3/4ths bottle of wine to get all the guest nice and liqure'd up.

    I make my meat sauce with all the same things but I use an immersion blender to puree the tomatoes in their cans before I pour them into pot. This is not the traditional way but it allows for consistency. A a second gen Supinese man I learned many traditional dishes of the Supino region, AS it happens, these dishes are often the typical ones of many of these videos.

    Loved it. I letted the meat and onion/garlic to brown by not touching it (to avoid grey meat and lack of flavour). I also allowed the wine to reduce enough before adding the wet ingredient (sauce) further.
    I also added minced lamb, then simmer (topping off with more water if the sauce gets too thick) for 8 hours. It was a bit on the thicker end like a Bolognese, but great recipe overall (especially the carrot and added sugar).

      Neriedar I just cut them up into pieces and cook them down in some olive oil - sauté them !

      I roast mine. Either in the oven, or I crank up the bbq, and roast then over the fire until the skins start to burst, and there’s a bit of char on the skins. You can peel off the skin, and have a nice slightly smoky flavour.

    here's a tip for getting all the tomato puree out of the can! if you pour in a tiny tiny bit of water, swish it around a bit, then pour it out, you can get a lot more of it a lot easier!
