  • How to make your bread super soft... here's the secret.
    INGREDIENTS:
    1/4 cup bread flour
    1 cup cold water
    This bread improver will surely make your bread soft that will last for a few days. Just mix this recipe to your dough and it will give you a satisfying result. This recipe is good for 4 cups of apf. This bread improver will up to 3 days in refrigerator.

    ok, and then what? Considering hydration, etc? How do you mix with flour? Does the enhancer replace any ingredient or do you just add to recipe as an extra ingredient?

    They call it tangzhong in Chinese and yudane in Japanese. For dough enhancer, I just add little bit of Vitamin C and Soybean Lecithin. You can also try to add a cup of plain Yogurt to make the buns softer. To make very soft buns, the best is using low protein flour such as Chinese or Hong Kong flour.

      Will that me the bread as soft as the strawberry soft bun from tours les jours? The one that looks like a baguette but is very pale in color? It not only super soft but very airy too!

      You can use it for wheat or white bread, but i'm warning you the dough will be very sticky so be patient while kneading.

      The video mentioned at the beginning, 1/4 cup flour, 1 cup water. But i recommend to use half of the water and the other half in milk

    What does, "its good for 4cuos of flour" mean? Does it replace 4 cups? Do you add it in addition to 4 cups if flour which makes about 2 loaves of bread?

      It will become watery, just refirgerate it and it will last for up to 3 days only.

      Yes po. Be patient lang po kasi very sticky po sya talaga. Ang ginawa ko po dun s flour ko na 4 cups nag seperate ako ng 1/2 para pang dustingnko po pag sticky pa din sya.

      Yes you can absolutely use all purpose flour. All purpose flour is actually bread flour also.

      Bread flour/ 1st class/ hard flour - used in soft based yeast bread like pandesal and ensaymada. While 3rd class flour/ soft flour is used in hard yeast based bread like putok bread.

      You just mix it with any bread dough. You will have a very soft bread but be patient if kneading by hand because it will be very sticky.

      Yan recipe po ng bread improver na yan is good for 4 cups of apf or bread flour. If you will knead by hand be patient lang po kasi very sticky po talaga sya.

    I use it to made some Chinese bun (bao), but why the bun became harder after few hours than those I made previously without this softener? What's wrong is it?

      You can add it all. This recipe is good for 4 cups of flour. It's proven but you have to be patient if kneading by hand because the dough will be very sticky. Thank you

      @@gracemensah8291 that’s what aluminum is. Would you prefer it was made from aluminum foil? In low amounts it doesn’t harm us but why would you add a potentially poisonous metal to your food? You don’t need it, learn how to make bread properly!!! Secret to soft fluffy bread is doing it properly. I would use “bread improver” if anything not soda cans!!!
