    Love Martin I have been watching his show since I was a kid in the early 90’s on pbs station and fortunate enough to live so close to SF China town.

    just a few months ago my chinese grandma had two chickens grazing in her backyard. soon she invited us to dinner and no chickens in the yard and the final course was some chicken soup. i found it quite funny bc she used to be a relatively successful farmer in the 70s-80s in vietnam. my little brother asked, “did grandma kill the chickens?” everyone said, “of course!” hahaha

      I was always told, never get too attached, they are not pets. World round, people cook for example a chicken when a guest comes. It is a sign of respect to feed from their own. Likewaise it is rude to not eat after going through that all. Traditions!

    Hello there!
    Please advise and educate people that using clay pot is tricky because the clay pot can break if you don't understand transparency about temperature.
    Cheap clay pot can break easily if you don't understand the principles of feng shui with temperature.

      itd be too much of a hassle to make these sauces really and their taste would be relatively the same, but it would be interesting to see

    Hello there!
    Do we watch Shaolin Kungfu movies with Gordon Liu?
    Chinese Shaolin Kunfu chefs.
    If you have oil, you can hurt your yourself around a person who does not know how to use a deep fryer in a kitchen.
    Do you know how to clean oil spills before the chef slips and slides in the kitchen with a knife in hand?
    You move out the way when the chefs slips on oik..!

      Ah, the cured pork hung outside brings back memories.
      My wife, who was from Guangzhou, prepared a couple of pounds of pork just as shown in the video and hung it from a tree in the backyard. That was when I learned we had a colony of wasps (Vespula vulgaris) living in the backyard underground. They ravaged the meat. I made a screened cage to hang the pork in, but it wasn't tall enough for long pieces. When winter came and the wasps were dormant, I attacked them by pouring boiling water into the nest and then I dug them up. About 1 1/2 feet underground was a block of concrete, evidently part of an old foundation, which weighed about 40 pounds. The wasps had built their nest around it.

    the only thing I never liked about his shows is he always seems so rushed.. would love to see one where he takes his time and talks it out instead of being in a hurry

      i dont think ive seen a slow chinese person beside myself being only half, though my vietnamese dad is the opposite of slow. maybe the relaxed life in the us has given me a similar temperament

      It's part of the style dude! Of course, the show basically follows the stereotype that Chinese cooking = Kungfu. So the stir fry is just like fighting.
