      in 1888, a Chinese food stall operator named Lee Kum Sheung was simmering a pot of oyster soup and forgot about it. When he returned to the pot, he found that the soup had reduced into a thick, brown paste. He tasted it and discovered that it was rich, savory, and delicious. He called it "oyster sauce"

      Bok choy...it's a Chinese cabbage, part of the brassica family. Baby Bok Choy is just a smaller, less mature Bok Choy, so it tends to be quicker to prepare and is more tender. :)
