Seems you could print the covers on a 3d printer as well and eliminate the need for the acrylic cutter. Make them with spokes if you want to add some visibility to the innards. If it is designed to turn in only one direction you can design your wave bridge accordingly and cut the number of diodes in half. They eat voltage and amps. Impressive feat nonetheless. Just a lot of work for a little amount of energy, but as a learning project might be fun. I made a generator to attach to my pet hedgehog's running wheel. Was DC and designed to operate in either direction he/she was running. Man needs a hobby...

VOLTS?I would think that to be more realistic it should be like maybe 6V-90W or even 10....But, to get higer Voltage, you require higher AWG enamelled copper wire, like around at least 30AWG, not 0.5mm or such. SO, higherV- thinner wire, higher current-thicker wire.....To do what hes doing, you would need at least 150 turns per coil I am sure. And, another big red flag, why no insul on the faces of the stator? Tear down any hoverboard motor,which is also an AC Alternator, and you will find that every side the enamelled copper wire touches the stator, there is plastic insul under so you dont have 100 percent copper steel losses. Sorry but, D for Doggy Broke its Bones!
Oh and the 3d printed BLDC motor he did, had the most awful terribad winding. Wild winding NOT OK!!!! I can tell for sure that he has absolutely no idea what hes doing.

If you are not showing the voltage and amps with a multimeter then video is incomplete. I am assuming u r generating around 12 volts and approx 8 amps. You should have shown the rpm at which it is generated.
Thinner the wire, more the turns and higher the voltage & lower the current will be. Thicker the wire, less turns and lower the voltage but higher the current created.
Also add the reaistance. You can also get more power by using really strong neodymes init. And make it so much easier to build as I am sitting with exact stator and I figure I will use 3 wire @ 0.5 mm easier to turn. But I can squeeze more than 20 turns I'm sure

Also, you should design it to use rollerblade bearings that are more easily available to the general public, and usually cheaper.
