**PASTA BAKE RECIPE, FEEDS 6-8**
1 lb Simple Truth™ Emerge Plant-Based Chick'n Grind
25 oz Simple Truth Organic™ Marinara Pasta Sauce
15 oz Simple Truth™ Plant Based Vegan Alfredo Pasta Sauce
8 oz Simple Truth™ Plant Based Non-Dairy Mozzarella Style Shreds
1 lb dried pasta
olive oil
breadcrumbs
fresh basil or parsley
Heat a thick coating of olive oil in a well-seasoned cast-iron skillet over medium-high. Put in the Chick'n Grind, and stir aggressively with a wooden spoon, scraping up anything that sticks to the pan. Stir and scrape until the grinds go brown, 5-7 minutes.
Dump in the pasta and just enough water to come halfway up the dry pieces. Stir and cook for a minute, then stir in the bottle of marinara sauce, and 2/3 of the shreds. Use a spoon to drop in the entire bottle of Alfredo in 6-8 individual dollops - do not mix them in. Top with the remaining shreds and scatter over some breadcrumbs.
Transfer to the oven and cook under a moderate broiler until brown on top, 5-10 minutes. Remove the pan and let it sit for 30 minutes before topping with fresh herbs and serving.
**DOUGH RECIPE, MAKES ENOUGH FOR FOUR PIZZAS**
2 1/4 cups (530 ml) warm water
1 tbsp sugar (12g) sugar
1 tbsp (9g) active dry yeast
2 tbsp (30 ml) olive oil
1 tbsp (18 g) kosher salt
5 cups (600g) bread or all-purpose flour, plus more for working the dough
additional oil for greasing the dough
Start the dough by combining the water, sugar and yeast in a large bowl and let sit for a few minutes. If the yeast goes foamy, it's alive and you're good to proceed (if it doesn't, it's dead and you need new yeast). Add the olive oil and salt and 5 cups (600g) of bread flour. Mix until just combined, then start kneading. Add just enough additional flour to keep the dough workable (i.e. not too sticky) and kneed until you can stretch some of the dough into a thin sheet without it tearing. (NOTE: You will probably need to add a lot more flour. The quantity I give here is just a base line to get your started.)
Divide the dough into four equal balls and put them in four containers (ideally glass) and lightly coat the balls and the interior of their containers with olive oil. Cover, and either rise at room temperature for two hours, or put them in the refrigerator and let them rise for 1-7 days. (I prefer the long, cold rise.) - Навчання та стиль

Their Simple Truth brand has some amazing mock meats. I’m not vegan, just trying to cut down on my meat consumption, and I really like the “chicken” tenders, especially with some Franks red hot. They always have sales too so they are cheaper than the other brands.

I worked for kroger (Under their QFC brand in washington) and there were whole stands and big advertising pushes for the vegan and organic substitutes, and generally they seemed to be pretty quality, When I asked people they seemed to be really happy with the product. On the subject of kroger though, they did fire me because I told they I wasn't going to stop double bagging peoples groceries. (I was being asked to, they were paying for the bags, AND most customers were walking up to a half mile with the bags??? Turns out they actually lose a couple cents on every bag. Fuck you kroger.)

Say what you want but sponsorships are a large part of how people make money, Christopher McQuarrie said when he was working on the Mission Impossible movies. "yeah you'll see a lot of BMWs in the movie but that helped us fund better more elaborate stunts." this is a bonus video! Also, at least it's in line with the channel, its not like it was for a video game or earbuds. He took the time to make some pretty delicious looking food and included tips to prepare it if you aren't used to the products. so you learned something and that might actually allow you to give those kinds of products a try. kroger isn't the only vegan brand and a lot are based on similar formulas.
in short, He took not just, stuff you can get at kroger, but a pretty narrow list of items, to which there are other brand alternatives around, made yummy looking food and i think that is honestly quite creative! Well done Adam.

@@lieQT If you don't live where Kroger is then treat it as an advertisement for some other brand of plant-based food. Simple Truth stuff is pretty much generic cheaply-made plant-based/organic stuff that's going to be more or less equivalent to whatever your local grocery chain carries.
@@lieQT part of my point, and fluffy said this as well, was that there are other brands with similar ingredients that’ll behave similarly. The flavouring may vary a bit but it’s all in the ballpark. Even though it’s Kroger specific you can insert another brand and probably be just fine.

I can't thank you enough for mentioning the need to adjust expectations when using plant based ingredients (vs animal ones). So many people want to disparage meat substitutes, in particular, because "they don't taste like my regular sausage/hamburger/whatever." Well, they probably aren't going to! Just taste them and see if they are delicious in their own right!
I'm a vegetarian - still eat cheese - but I deeply appreciate the focus on dairy-free cheeses. Makes me wish there was still a Kroger here in SC. I'd LOVE to try that plant-based Alfredo.

@Claptrap Jesus What do you mean "actual food"? Everything is "actual food". A lot of vegetarian/vegan companies can make products that arent practical to make in the home kitchen, and are more similar to meat. Its hard to make "not fake unprocessed" vegetarian meats.
@Claptrap Jesus I don't have a craving for meat, but I do recognize the niche that these meat substitutes fill. If the goal is to get meat eaters to eat more plant-based foods (and that's a WONDERFUL thing), "this industrial shit" serves a great purpose. Also - that plant-based cheese? Industrial. Dairy cheese? Industrial. The shit at most restaurants that meat eaters frequent? Industrial.

Exactly. Expecting something to taste exactly like something else not only guarantees disappointment, but also primes your taste buds to sense something is "off" (as in gone bad or inedible).
as a meat eater (mostly at least) I don't find vegan options bad,disgusting or anything of that sort. I do however find the marketing atrocious.... It is not meat and just throwing "vegan" infront of whatever meat product you want a vegan "replacement" for is gonna bring the expectation of it tasting like said meat for things that are heavily spiced such as certain sausages it probably will taste quite a lot like that type of sausage just not quite and you will pick up on that if you dont drown those off-flavors in sauce or whatever. I have no calms about eating vegan,vegetarian or such but if I'm doing that it's because I made a dish that happened to be vegan not because I made something and replaced an ingredient that is supposed to be some form of meat with vegan stuff. Make stuff that is vegan without resorting to a product that *almost* does the job like regular ol' meat. make something that does the job and that just doesnt have meat in it

Depending on the reason you're vegetarian, you should go vegan. If you're doing it for the animals, you should realize that the dairy and egg industries are just as cruel and inhumane as the meat industry. If you're doing it for the environment, realize that vegetarianism still produces way more emissions than just plants. If it's just a diet to you then I guess there probably isn't much of a compelling reason to go vegan

As an omnivore, I am also glad he makes vegan recipes on a regular basis. Gives me ideas for making similar recipes. (Will admit it the cheese on pizza doesn't stretch, I'm not remotely interested, despite Adam's telling us not to be concerned with texture. Can't be helped.)
So if I made a vegan dish, it won't contain faux cheese. But I have some Indian cookbooks, too.

If you want to bake a pizza for longer time in the oven, in order for this cheese to melt, you might need to use higher hydration dough, to keep the inside moist. Adding some olive oil to the dough also helps, just not too much, because adding it makes less crispy exterior.

Personally, I’d find it disingenuous if chefs sneakily introduce a product they were paid to use while keeping the appearance that this is a completely normal and unbiased video. This one is honest. A company asked Adam to use their products, he showed us how he’d use them. And he made it clear from the beginning.

ive heard you talking about how this channel is unrepresentative of how much meat you actually eat before, just wanted to say props for carving out the ability to plug vegan or meatless food on here. Fair play man.
Thanks Adam. My trick as a vegan tends to be to instead of using cheese replacements. I'll make the sauce really good and then just add a few toppings to replace the cheese. Grilled Eggplants or charred red peppers works really well. But then you want a sauce that compliments that, haven't really found anything that compliments a traditional margherita sauce.

That's why some wines taste like butter. It's the process called malolactic fermentation that turns the sour malic acid of the wine to the milder and "cheesier" lactic acid.
Just putting it out there, putting panko in the pasta bake means there's gluten in it! Important to keep in mind if you're cooking for someone with celiac disease.

I haven't tried it with the simple truth vegan mozzarella, but a trick to get the vegan cheese to melt is to heat it in a non stick pan first then just place it on the pizza sparingly and bake normally at high temp. It honestly doesn't taste much better, but just looks much better visually.
I used the shreds last night and they were decent, but almost a bit too sweet. I also did have banana peppers and other toppings that tend to be sweeter, so maybe I just botched the overall flavor profile.
They're starting to sell more plant based meats in Europe, too, but everything is kinda evolving slower here. People can be so resistant to change.

I am honest, about 90% of those plant based meats don't taste good, so, I am happy they don't sell them here.

Mashed potatoes mixed with cassava starch makes up a pretty decent cheese substitute!
@Claptrap Jesus if lactose was the problem I would totally do that. Unfortunately it's an allergy to the casein that's the issue. We have goats that we milk and they do fine with their milk since the casein in their milk has a slightly different structure, I just don't want to get into cheese making lol

While I'm a omnivore, I like making my own veggie or vegan burgers, from scratch, not expecting them to taste like meat but good in their own right.
Honestly I've never been disappointed with a Kroger product, their plant-based ones no less. I've been using the vegan mozzarella for sandwiches, and they melt in our panini press just fine :)

I would love to see more food science based dietary restriction recipies from you. I tried making some gluten free pizza dough using recent literature. It turned out horribly. It was a high protein (12% by weight) brown rice flour (Cahokia) partially pre digested with aspergillus oryze and then treated with a trans glutaminase enzyme. I also used this in combination with a couple different modified cellulose powders. All this food science and it was one of the worst things I've ever made for just about every reason you can think of. The texture wasn't anything close to how a gluten dough would act. A complete failure. I would love to see you take a crack at gluten free pizza dough.
As a vegan, I love your channel and recipes and really appreciate the vegan ones too, especially because you aren't vegan. But I love most that you appreciate good food regardless of if it contains animal.
