      Hello Gemma I will help you make this softer and more easier. You can use whole wheat flour from any Indian grocery store. It will be easy to work with that. And you can make dough in stand mixer I do mine in that. Just add salt and tad bit of oil no baking powder/soda. Rest everything same roll out and bake on the pan. It will be quick and very soft.

    Pro tip Gemma: buy whole wheat flour from an Indian grocery store. The whole wheat flours from American supermarkets is husky and harder to knead. The "atta" from Indian stores is smoother and requires no incorporation of white flour. Knead the dough a bit more, the texture becomes much more smoother, in fact do the kneading in batches, cuts down the elbow grease. 2 mins till the dough just comes together after adding water, 10 mins rest, 3-4 mins kneading, followed by 10-15 mins rest time. divide into portions only after, no need to rest after portioning. Also, high high heat on the pan which should preferably be a smooth iron one, but a cast iron pan works well too.

    Healthy and delicious!! We call them chapathis or rotis in India. It is a staple food. We use 100% whole wheat however.

      @@biggerbolderbaking Whole wheat flour, salt, oil and water. We knead using our hands and let it rest for 20-30 minutes before rolling them out and baking on pan, flipping on both sides. If dough is proper it puffs up nicely. Oil or clarified butter is applied when flipping.

    Nice to see that you are really working on preparing healthy recipes in 2019. We usually don't add all purpose flour to whole wheat flour mixture cause it tends to make the rotis elastic. Niether we add baking powder to it. If you knead the dough well and make it soft they usually puff up so u can skip the leavening agent.

    I was able to successfully make this recipe (and I am a beginner baker). The tortillas were really delicious. I squashed the balls of dough with the bottom of a flat cooking pot to get a 5-inch round size before doing further rolling which helped my shape immensely.

    I got fed the "Three Ingredient Flatbread" video, and instantly subbed. Your presentation is engaging, and naturally, you make baking look like fun! I am not much into all the sugary stuff, so I'll see how I go : ) BTW, I use olive oil in every loaf I bake : it certainly does change the texture for the better.

    Thank you so much for posting this recipe. I was just diagnosed with prediabetes, which runs in my family. That’s the one thing I was finding hard to give up was my tortillas. Sodas, gone, candy, gone, but my tortillas. So thankful I found this, and the fact that you use wheat and white which will make them seem more like the real thing.

    In India most of us eat this during our dinner time with some curries or something. Thank you Gemma for spreading this receipe world wide. This is known as Roti in India

    I always make these with 100% wholewheat flour, some salt/spices and water. My trick is using hot water. I find that tortilla’s without oil are much lighter

    That's the way I make my tortillas. But I use hot water and I do use whole wheat flour most of the time, yes it is a little harder but still very good haha

    We call it roti or chapati in India we use only whole wheat flour we don't add baking powder. It goes very well with curries. It's so amazing to see how many different varieties of food we can make with the same ingredients 👌

    I make my dough with just 100 percent whole wheat, a little salt and water plus I roll them into rectangles because I can put my filling onto the tortilla, fold the narrow bottom end up and then fold the sides over onto each other . This way, the filling never falls out because the bottom is folded up.

    We knead the dough at least 5 to 10 minutes
    After that if we feel there are no cracks,it means the dough is done
    We make the balls in the same way that there should be no cracks
    The dough should be soft.sometimes we add a little bit of milk to make even softer dough
    The water quantity and kneading should determine the softness
    We use flour,water,oil but no baking powder
    The dough should be roll in such a way that it thickness should be equal from all sides
    We use the whole wheat flour.but the flour bought from the store should be extremely fine
    And we normally serve chapatis or whole wheat tortillas with extremely delicious daals,curries,karahi,dry cooked vegetables etc etc there is a long list

    I am surprised Gemma lives in Cali but is not gluten free! Irish background :)
    I have realized if the flour is ORGANIC, no chemicals whatsoever, I have no issues. Of course, it is more expensive if you live in states, but if you incorporate more “food” veggies and other grains, you won’t eat bread daily.

    Hi Gemma using lukewarm water to make the dough and kneading it well gives really soft rotis. After it is done apply a bit of oil and rest it for 20 to 30 minutes to get soft rotis.. Using milk with water in 1:5 ratio also gives soft rotis. We make stuffed rotis with potatoes, cottage cheese etc.

    Try making corn tortillas it’s amazing and 10x better than regular tortillas. And make it using hominy u won’t be disappointed. It’s a traditional Mexican tortilla.

    Great recipe! Second time I am making this. This time I didn't overcooked them like last time, so they are flexible now. I undercooked them instead because I wasn't planning to eat them yet. Is that ok? Can I cook them a little bit later?

      This recipe uses baking powder as raising agent which means it's a quick acting dough. So I don't recommend you to partially cook them in that way you won't get the best result . You can roll them out, cook the amount you want to eat then dust the with flour and put parchment paper/cling wrap/wax paper in between then freeze them. Cook them off from frozen whenever it's time .
      Or you can cook the whole batch off at once and freeze any leftover in airtight bags or containers. Reheat them on stove top or a toaster for 2 minutes or so or in wet paper towel in microwave for roughly 20 - 30 seconds. Hope this helps !

    can I put the dough in the freezer? like make a lot of batches and store them?

      You can cook them and then freeze them. They keep well in the freezer for up to 8 weeks
