Ingredients

1 large lemon
2 cups flour (all purpose flour)
1 tsp nutmeg
3 tsp baking powder
1/2 tsp salt
1/3 cup + tbsp oil
3 eggs
1/4 cup + 1 tbsp milk
1 cup sugar
Instructions:
1.Wash the lemon thoroughly,remove the extremities at the top and the bottom where the zest tends to be a bit hard.
Remove all the seeds.Cut it into pieces.
2.To a bowl,sift together flour,nutmeg,baking powder and salt.
3.To the blender, add oil, eggs,milk ,sugar and cut lemon.
4.Blend the ingredients until you achieve a smooth mixture
5.Pour over dry ingredients and gently mix
6.Pour the batter into the prepared pan
7.Cook on low heat for 30-45 mins or until a toothpick inserted into the center comes out clean
8.Allow the cake to cool before slicing it
