Slow Cooker Broccoli Cheese Soup {Better than Panera!}

I finally have put my broccoli cheese soup recipe on the blog! I hope you enjoy!
RECIPE:
INGREDIENTS:
2 heads broccoli 6-8 cups after being cut or can use 14-16 ounces of frozen broccoli
2 carrots shred with a cheese grater or dice small.
1 sweet yellow onion diced
¼ tsp. garlic powder
¼ tsp. pepper
32 oz. chicken broth
¼ cup corn starch
WAIT TO ADD THESE INGREDIENTS
1 lb. Velveeta cheese (this is the smaller box)
1 cup heavy cream
SLOW COOKER SIZE:
5-quart or larger
INSTRUCTIONS:
Cut the heads of broccoli by cutting off each floret. Cut the stem into medium size pieces. Add to the slow cooker. If using frozen, no need to cut up more.
Add the carrots, onion, garlic powder and pepper.
In a large bowl whisk together the chicken broth and cornstarch. The chicken broth must be at room temperature or cold for this not to clump. Pour over the vegetables in the slow cooker.
Stir.
Place the lid on the slow cooker.
Cook on HIGH for 4 hours or LOW for 6 hours.
When the cooking time is up pour in the heavy cream and Velveeta (cut into cubes). Stir.
Replace the lid and cook for 20 more minutes on HIGH.
Serve and enjoy!

I have had a good broccoli cheese soup recipe for years, made this tonight and my husband said " out with the old in with the new" this was so good!!
I call this DISHLICIOUS. Glad I printed out the recipe, I will be making this often. My wife says its better than Panera's, Now if I could only find their Lobster Bisque!
The only difference I made was to cook for 30 minutes after adding Velveeta, could have went for 45 minutes.

Can you make just regular cream of broccoli without the cheese
I usually make this with ham or turkey and warm the sandwiches in the oven. The croissant and the flakey layers of the croissant. Im going to try my ham sandwiches with provalone. Im sure it wont melt like pre wrapped singles cheese but with that warm flakey crust I just bet its still yummy. I already know. A mini croissant warmed sandwich and this soup.....toe curling goodness right there.
Hi! I just made this today for the first time for a family gathering. The flavours were great, but the soup never thickened 🤷🏻♀️ I followed the recipe properly as far as I can remember, so I’m wondering if this has happened to there and/or what else I should/could try to thicken it? 🤤🇨🇦
You can add a water/cornstarch slurry and let the soup heat back up. I usually start with 2 tablespoons of each.
Whats the best way to warm it up after storing in in the fridge ? Warm setting ?
Hi! You can heat up in the slow cooker. I would do on low or high, stir once in a while.

As someone who absolutely hates Velveeta, can I shred a block of cheddar or cheddar and colby to use instead?
Yes, you will want quite a bit, I would use sharp cheddar.

Yes of course! I've been often using better than bouillon veggie bouillon in some of my recipes and it tastes great.

I made it but it taste different like it was missing something maybe it was cause I used extra sharp cheddar instead of the velveeta cheese
You may need to add more salt. Velveeta is pretty salty.
Yea that's what I figured next time I'm just going to try it with the velveeta to taste the difference other than that everyone liked it thanks for the recipe!

Broccoli browns very quick. The carrots and onions may not be done yet.
