  • A very populair fish in The Netherlands is herring. Especially salt(y) herring. Obviously for sale in a fish shop, but also in the typical Dutch herring stall in the street.
    The conservation of this fish was invented by a Dutch fisherman in 1380.
    First a part of the guts and the gills of the herring are removed, except for the pancreas. The pancreas ripens the herring by fermentation. The video shows you the pancreas. It is decisive for the taste and fat content. Formerly the herring was covered with salt and stored in barrels for conservation. Today the herring is conservated in the freezer.
    In the fish shop or the herring stall they remove the pancreas, head and bone and the rest of the guts.
    Traditionally you eat herring in one piece, holding it by the tail and then biting it off. But you can also get it in pieces or on een a sandwich.
    Herring is usually served with onions and pieces of sour pickle. But of course as you like it.

    Please stop leaving more comments about the Japanese language as no more are needed. Please share something insightful instead. Skansen from Finland makes the best spiced, pancreas matjes herring in glass jars, but it is very expensive. In the USA, you can find all kinds of herring in Polish/Russian delicatessens and grocery stores in the fish department. IKEA has the best pickled herring that has the right texture. Brands like ACME, Nathan's, Vita, etc. are mushy and unpleasant in texture. Blue Hill Bay is very good and is even sold at Costco for the best price! They even make Dutch matjes style herring with spices and the pancreas flavoring.

    I sampled some herrings whilst visiting Amsterdam and loved them, as well as all the other Dutch street food.

    For me, shallots is more delicious to be eaten raw than onions.

    Not as popular these days as the Netherlands, but they have been eaten in the U.K for centuries. Old guy used sell them in pubs from a wicker basket alongside cockles, whelks, mussels, shrimps. I'd usually have a mixture with a coating of thousand island dressing. Great for soaking up alcohol after few beers.

    I’ve been a few times to the Netherlands and have always loved your herring. Thanks for this interesting video. Come to New York and try some of the Jewish style herring, at places like Russ & Daughters from 100+ year old delicatessen. It’s cured in vinegar I believe. Another style I love is I think from Jewish/Russian traditions: schmalz herring. Cured in oil and very salty, it’s hard to find good schmalz here but it’s truly fantastic-just by itself with chopped onion on a bagel or simply eaten by itself. The salt is probably too much for some people but I truly love it

    I Grew Up Eating Fried Salt Fish Herring (After my Mother Desalted the fish by Soaking it in Fresh water 2-3 times a day for 3 days). 😊 We Usually Ate them with Homemade Indian meal Cornbread. Although the Fish has Fine bones...THE TASTE OF THAT FISH IS ABSOLUTELY DELICIOUS! 😋 EVEN MY NEIGHBOR WANTED SOME!
