Yay!! You can really use any shapes but I like that it has that sleek modern look but a simple shape that if you don't have a cutter you can always use a jar lid or cup so no excuses to make them hehe ❤

I think we are our own worst critics! Just keep practicing, take pictures and you'll see your progress much better that way!

Stephanie, the most stressful part of cookie making for me is preparing all of the icings! Can you share how you get all of the icing ready? I saw all of your piping bags neatly laid out with all the consistencies and colors you need for these cookies. It's THAT part that is super time consuming for me and stressful! Do you put your original icing into separate bowls to color them? Then do you separate that again to make 2 different consistencies? What about running out of a color? Your advice would be greatly appreciated! :)
Preparing the icing is definitely time consuming! The way I do it is I try and make my original icing to my outline consistency right out of the mixer, then I put enough in each bowl for the outline and flood for each colour, then colour each one. If I need to adjust the consistency for my outline, I do it now for each colour. Once its good I take some of it out and bag it. Then I add water to the remaining icing in the bowl and make it my flood, then I let that sit with a damp paper towel to let the bubbles rise, I try to do it at least 10-15 minutes while I prepare the other colours. Then I pop the bubbles with my spoon and bag my flood icing. I usually always make more than enough as I hate trying to remake an exact colour, and then I freeze the leftovers to and add them to new icing in the future. What I like about having the outline consistency is that if my flood runs out, I usually have more than enough outline and can thin some of it down. Hope that helps a bit!

Thank you so much!!! And yes, my bags have a seam but it's very small and usually doesn't really affect the piping at all. I have the bags linked in the description of the video or in my Amazon store. The thinner ones are good for super fine details as the seams are smaller but I use the slightly thicker ones as they work just fine for me and they don't burst even with lots of pressure!

Which bags do you use for outlining vs flooding, or does it not matter? Trying to figure out the difference between the two types of piping bags that you have listed. Thanks!
I use the same brand of bags for both! I just have 2 different consistencies of icing, so for each colour I have a thicker and a thinner icing. The ones I listed are both good, the 2nd ones are a touch thinner so they have a thinner seam and are good for very fine details but because they are thinner they ca burst easier if you put a ton of pressure on the bag. I usually use the first ones more as they're a bit thicker but still good for detailed work but haven't had one burst on me yet! Both are good and I've used both a lot over the years!

Yes around 30 degrees, if im in a rush then I'll put it up a bit higher! But I try not to have it too warm. And what a great idea, I'm sure everyone will love their gifts ❤
Hahaha I don't eat too many anymore. When I used to sell them, I always tried one to be sure everything tasted alright but nowadays my family snaps them up normally!
Once they're completely dry (I'd give them at least overnight to be sure, uncovered) you can have them in a container and stack them with no issues. They're pretty sturdy and can be handled easily once dry. They also freeze really well. The trick is to have them in an airtight container, or ziploc bag and when you want to defrost them, take them out, leave them on the counter and do not open the bag or container until they are completely defrosted. If you open it too early it may cause condensation and the icing may be damaged or bleed. But freezing is a great way to keep the around for a long time!

Hi there, these are so beautifully decorated. Would you be able to tell me, besides those plastic tubes for the icing, what are the instruments you use to decorate? I know you mentioned a "scribe" and wondered if there is a special name for it. Thanks so much.
Thank you!! The tubes of icing are called tipless bags. Basically icing bags where you don't have to use metal tips because you just cut the tip off the bag. And it's actually called a scribe tool! If you don't have one a toothpick is all you need really. Other than that, you need some good gel colours and you're good to go!
I leave them out without any fans or dehydrator running. So usually I leave them on the counter or if they've dried for a while alreayd I'll leave them in my dehydrator with it turned off and the door wide open. But they can be left out for days without getting stale!
I always add white to my icing when I make it, even if I color it black after! And if im doing black and red I always try to do it with fresh icing and dry in a fan or dehydrator. Seems to work 99.9% of the time! Here's my icing recipe if needed ua-cam.com/video/L5mVKZnTqac/v-deo.html
Lately I've been using the Cake Mama bags, but I've used Master bags as well (can find them in amazon). I've heard great things about Borderlands Bakery bags and TMP bags as well!
Yes I think they're about 12 inches. I try to get the largest size always! Sometimes in videos ill cut my bags down just so they don't block the view of the camera, but I always use the big bags 😊
Royal icing doesn't do well with moisture/fat, so if it's on buttercream im not sure if it was piped directly on if it would hold up. You could always do cookies and then add them on to the cake!
It can take a few hours for the bottom layer to dry, but if you have a fan that you can place so it blows air on your cookies, it speeds up the process and you maybe only have to wait about 40 minutes or so. If you do a few dozen, by the time you've finished them all usually the first ones are good to go for the next layer if you use a fan. You can also use a dehydrator to speed it up as well if you have one.

Yes, I do! You don't have to, but I find it easier for me. I make a thicker icing for my outline so it keeps the inside icing (the flood) on the cookie!
Hi! The fastest way is with a dehydrator! You only have to wait 20-30 minutes for it to crust over. The next best way is to use a fan to blow air on your cookies! Take a bit longer, but works better than air drying!
Hi, when I make royal icing, it crusts so quickly that I have a hard time doing the wet on wet technique. Do you know why that would be? Could it be the meringue powder?
How much meringue powder do you use? Are you in a really dry environment as well? You may have to add more water to your icing to make it more liquid so it doesn't dry as fast!
@@LittleCookieCo for a two pound bag of sugar, I use 5 tablespoons of powder and a little more than 1/2 cup of water. I live in Baltimore so It's not dry. Does it matter if the icing has been out for a while. I use piping bags and not bottles.
I only use about 3 tablespoons so maybe try to cut back on the meringue powder. And when you make your flood consistency, try making it a little thinner, so add more water. And having the icing in piping bags shouldn't affect it much unless you have it out for days (but it leads to separation and not make it dry quicker). I didn't list the coloure but the ones I used were (all Americolor brand): Leaf green Lemon yellow mixed with egg yellow Red Red Sky blue Super black Warm brown mixed with chocolate brown
I usually make cookies one night then decorate the next! So after they bake and have cooled down, you can put them in an airtight container. If you wont decorate them for a while, you can always freeze them as well. For icing, you can make it ahead of time and freeze, and you can also freeze any leftover you have as well!
@@LittleCookieCo I couldn’t even get the icing through tip #3. I’m guessing my Wilton Cake decorating tips are the same??? I’m brand new at this and flopped totally! :(
Oh no!! Was your icing really thick? The hard part with royal icing is it dries really quickly, so I always have a damp paper towel and pit the tips of my bags on, and then I fold it over the tips to keep the from crusting. Or your icing could be thick and then harder to come out of the tip.
@@LittleCookieCo I didn’t think it was too think. I made the icing recipe with corn syrup and not the meringue powder (I know mine was quite old). Once I can get some more meringue powder I will try it again. I just used the icing to spread on the cookie and used sprinkles so I didn’t waste it. Saved some cookies to freeze and try again later.
Maybe try sifting your powdered sugar? Could have clumps in there that's clogging the tip. Or have you tried using tipless bags? That way you can cut your tip as big or small as needed?
Haha I mean you can use whatever you want I guess if you're eating them. People usually use toothpicks, they work really well. You want something sharp and pointy, not sure if an screwdriver would do!

Yeah I saw the video and thought that looks way worse than it is haha. But I guess its the lens blur at that point and the shadow makes it look like the cookie 🤦♀️ but these cookies have brown sugar and when they are golden brown on the bottoms they taste sooo much better in my opinion! I've tried not letting them brown and the taste just wasn't there 😊

Which bags do you use for outlining vs flooding, or does it not matter? Trying to figure out the difference between the two types of piping bags that you have listed. Thanks!
I use the same brand of bags for both! I just have 2 different consistencies of icing, so for each colour I have a thicker and a thinner icing. The ones I listed are both good, the 2nd ones are a touch thinner so they have a thinner seam and are good for very fine details but because they are thinner they ca burst easier if you put a ton of pressure on the bag. I usually use the first ones more as they're a bit thicker but still good for detailed work but haven't had one burst on me yet! Both are good and I've used both a lot over the years!

I usually keep my dehydrator around 85-90°F . If I'm in a rush I may turn it up slightly higher 😊

Hahaha I don't eat too many anymore. When I used to sell them, I always tried one to be sure everything tasted alright but nowadays my family snaps them up normally!

Question on storing these. Once completely dry how do you store to not mess up the design (stacking them). And do they freeze/unfreeze well?
Once they're completely dry (I'd give them at least overnight to be sure, uncovered) you can have them in a container and stack them with no issues. They're pretty sturdy and can be handled easily once dry. They also freeze really well. The trick is to have them in an airtight container, or ziploc bag and when you want to defrost them, take them out, leave them on the counter and do not open the bag or container until they are completely defrosted. If you open it too early it may cause condensation and the icing may be damaged or bleed. But freezing is a great way to keep the around for a long time!

How do you know when to use a tip and when to use just the bag?

Hi there, these are so beautifully decorated. Would you be able to tell me, besides those plastic tubes for the icing, what are the instruments you use to decorate? I know you mentioned a "scribe" and wondered if there is a special name for it. Thanks so much.
Thank you!! The tubes of icing are called tipless bags. Basically icing bags where you don't have to use metal tips because you just cut the tip off the bag. And it's actually called a scribe tool! If you don't have one a toothpick is all you need really. Other than that, you need some good gel colours and you're good to go!

When you say dry overnight, do you just leave them out with fans/dehydrator? How long can they be out before getting stale?
I leave them out without any fans or dehydrator running. So usually I leave them on the counter or if they've dried for a while alreayd I'll leave them in my dehydrator with it turned off and the door wide open. But they can be left out for days without getting stale!

How do you keep the black icing from fading into the other colors?

Lately I've been using the Cake Mama bags, but I've used Master bags as well (can find them in amazon). I've heard great things about Borderlands Bakery bags and TMP bags as well!

Yes I think they're about 12 inches. I try to get the largest size always! Sometimes in videos ill cut my bags down just so they don't block the view of the camera, but I always use the big bags 😊

Royal icing doesn't do well with moisture/fat, so if it's on buttercream im not sure if it was piped directly on if it would hold up. You could always do cookies and then add them on to the cake!
I wanna try this one. But my question is, how long it takes to dry until you put another one on top of it?
It can take a few hours for the bottom layer to dry, but if you have a fan that you can place so it blows air on your cookies, it speeds up the process and you maybe only have to wait about 40 minutes or so. If you do a few dozen, by the time you've finished them all usually the first ones are good to go for the next layer if you use a fan. You can also use a dehydrator to speed it up as well if you have one.

Yes, I do! You don't have to, but I find it easier for me. I make a thicker icing for my outline so it keeps the inside icing (the flood) on the cookie!

Hi! The fastest way is with a dehydrator! You only have to wait 20-30 minutes for it to crust over. The next best way is to use a fan to blow air on your cookies! Take a bit longer, but works better than air drying!

Hi, when I make royal icing, it crusts so quickly that I have a hard time doing the wet on wet technique. Do you know why that would be? Could it be the meringue powder?
How much meringue powder do you use? Are you in a really dry environment as well? You may have to add more water to your icing to make it more liquid so it doesn't dry as fast!
@@LittleCookieCo for a two pound bag of sugar, I use 5 tablespoons of powder and a little more than 1/2 cup of water. I live in Baltimore so It's not dry. Does it matter if the icing has been out for a while. I use piping bags and not bottles.
I only use about 3 tablespoons so maybe try to cut back on the meringue powder. And when you make your flood consistency, try making it a little thinner, so add more water. And having the icing in piping bags shouldn't affect it much unless you have it out for days (but it leads to separation and not make it dry quicker). Check out this video i show how loose my flood icing is, it may help!

Whats the best way to store the cookies and icing? I don't make the cookies the same day i decorate, also can you make the icing ahead of time?
I usually make cookies one night then decorate the next! So after they bake and have cooled down, you can put them in an airtight container. If you wont decorate them for a while, you can always freeze them as well. For icing, you can make it ahead of time and freeze, and you can also freeze any leftover you have as well!
If you don’t have tipless bags, but using cake decorating tips, what size tip is best for a newbie?
I think tip #2 is best. Once you get comfortable tip #1 is good too! But I remember starting with #2 and found it was the easiest!!

Oh no!! Was your icing really thick? The hard part with royal icing is it dries really quickly, so I always have a damp paper towel and pit the tips of my bags on, and then I fold it over the tips to keep the from crusting. Or your icing could be thick and then harder to come out of the tip.
@@LittleCookieCo I didn’t think it was too think. I made the icing recipe with corn syrup and not the meringue powder (I know mine was quite old). Once I can get some more meringue powder I will try it again. I just used the icing to spread on the cookie and used sprinkles so I didn’t waste it. Saved some cookies to freeze and try again later.
Maybe try sifting your powdered sugar? Could have clumps in there that's clogging the tip. Or have you tried using tipless bags? That way you can cut your tip as big or small as needed?

Yeah I saw the video and thought that looks way worse than it is haha. But I guess its the lens blur at that point and the shadow makes it look like the cookie 🤦♀️ but these cookies have brown sugar and when they are golden brown on the bottoms they taste sooo much better in my opinion! I've tried not letting them brown and the taste just wasn't there 😊
