    I find myself using an oven for a lot, these days. My county fire Marshall would've been right at home in the USSR and grilling is a pain in the ass. Pan searing is out of the question because as much as I love it, my shoebox apartment gets stunk up for days afterwards and it drives me crazy.
    A combination of roasting heat and broiling for crust has served me surprisingly well.

    Can easily just use a ribbed cast iron griddle, pre-heat it to 550 and then sear it and cook it completely at the same time - oven open for thin steaks - oven closed for thick steaks. Takes a hell of a lot less time. Just turn & rotate it after a couple minutes so that you get perfect grate marks on both sides.

    Seasoning is everything. Second - temperate. Third - time. I dont own a grill and I dont want one. So my TURBO-toaster oven is KING in my cooking

    I was salivating the whole time during this video. But it gave me some ideas to improve my steak game. I'm more of a thick steak kinda guy and the last steak I cooked was so good! I seasoned with cracked, salt and pepper and then garlic powder, I then seared it first (got some nice diamonds on a few of them but then went indirect and it happened to cook longer than I wanted (should had pulled at 120 butvwaited to 127) but it turned out pretty freaking good pink edge to edge, more of a medium than my medium rare i prefer but still so good. I've never done this method of a reverse sear like he did and I'm gonna definitely try it! Thanks for the video dude its nice to see well documented cook alternatives as apposed to just tossing things on a grill!

    i like cooking steak in oven when I need a lot more strips for guests and its the winter (not bbquing). otherwise I finally learned the pan but its not always practical and you don't want the mess when people are over

    I love a steak pan seared, but I can’t stand the splatter. EVERYWHERE. I despise doing it. So I prefer oven only and thankfully, my husband loves the oven only version. I’m still looking for a middle ground solution: oven only, with at least a little more crust than what I am currently getting. That giant pan is also too messy, lol.

    I just did this cooking a 3/4” New York Strip in the boiler for the first time ever while watching your video and it came out better than any steak I’ve grilled or pan fried.
    I think I’ll be broiling a bit more from now on.

    So you just rely on the salt you put on it for the dry bine while it temps? No additional seasoning? I kind of want to do this but I will throw some black pepper on before I sear it on the griddle side of my cast iron grill. Hmm..

    I cook steak in the oven. I only buy from my local butcher and my steaks generally ribeye and are cut to my choosing, they are always at least 2” thick.
    1) rest the steak out of the fridge for at least 1 hour, preferably 2
    2) pre heat oven to 160°
    3) line an oven tray with foil use enough to cover over the steak and pour in a little garlic oil, add salt and pepper and steak seasoning if wanted
    4) place steak in the tray and season with salt, pepper, steak seasoning and garlic butter
    5) cover steak with the loose foil and place the steak in the oven.
    6) cook for a total of 30 minutes unwrap and turn after 20 minutes and baste then re-wrap(med rare)
    7) remove the tray from the oven ensuring the steak is completely sealed tightly in the foil
    8) wrap a tea towel tightly around the steak which is still wrapped in foil and allow the parcel to rest for approximately 8-10 minutes
    9) unwrap the tea towel and place the foil wrapped steak back in the oven tray
    10) open the foil allowing the juices to collect in the tray. Serve the steak and pour some of the juices across the steak according to preference
