      If you do beer tours I’d highly suggest you do a food tour and a full balsamic vinegar tasting like my Modena experience where you learn the production. It’s SO unique and the aging process/slow food concept is very Italian. .

    Balsamic Vinegar is basically from Modena, close to Bologna. More aged it is, the better! Fabulous with cheese but also some kind of fruits (strawberries) and over read meat or risotto. And yes, Ferrari is also a brand of brut sparkling wine :)

    Bologna is the first location of my first internacional trip. I was 25 years old. I miss Italy. ❤️
    I remember some things I ate there.
    I remember Pino's restaurant. Where I ate pasta and those individual pizzas. And another one where I ate a delicious pesto gnocchi.

    Please keep in your mind that we in Bologna don't make pasta, sed sfoglia, from foglia (in english leaf). Pasta is made with durum wheat flour and water. Sfoglia is made with normal white wheat flour and eggs.

    Have been planning to do a vegetarian "Eat-ly" tour in Italy. Too bummed to discover that classic Italian cheeses are made using animal-derived rennet....there goes my to-eat list containing Pesto alla Genovese, Cacio e Pepe and Margherita Pizza down the drain :(

    Nobody told you how to eat cheeses? Fig jam should be eaten with cheeses (that are strong, seasoned) to create the contrast between sweet and salty; same with cured meats (mortadella, ham, salami etc) should not be eaten "alone" but with bread (it's used to dampen the strong flavor).
    Sorry for my "google eng" but I couldn't resist the temptation to writing (you can't appreciate their taste if eating in that way).

      @@charliexx774 I hope the problem is my non-English, otherwise would be worrying (and not for me).
      It's obvious that everyone eats what they want, how and when they want, that's not the point and for sure is not what I meant by my comment.
      Some cheeses are made to be eaten in a certain way, accompanied by a certain food, otherwise can be too tasty, too strong or even unpleasant on the palate (same for some cured meats).
      If (example) I go to Turkey or China, try a specialty and a local tells me: "try to eat it with this, try with that, the taste is better" I don't feel offended because this person wants tell me how to eating, I try and if I don't like, I continue to eat it as I did before.
      It doesn't seem like such a complicated concept to understand.

    Hello Christine ! Loving your videos ! I'm traveling to italy with my wife next months. We already decided on venice and florence and now we are trying to decide between Bologna and Verona. Do you prefer bologna and should i choose it over Verona?

      Do both. I loved BOTH tho I only had a day in Verona.
      Bologna- a richer history, tradition, food culture.

    I think I'd get "fat" there. lol. I knew about the pasta and the meat is obvious, but things like the vinegar blow me away. I wonder why they are all about teh vinegar- I thought that might be mediterranean.

      It was used by our ancestors both as a medicine and in the kitchen as a sweetener and condiment. Making it is a real art. ✌️
      BTW Ed, usually in Bologna we bike everywhere so you waistline would be fine. 👍

    Bummer that she can’t show us “secret” places because they are “secret”. You are showing travelers where to go and what to do so not sure why you can’t share the locations.       Not for everyone I agree . But It’s a 100 year old vinegar. The process is quite delicate; many things can go wrong in the process of aging to spoil it. So it’s usually not strongly commerce driven as it’s a high risk/ slow food. The avg aging is 25 years minimum- 1/4 of a lifetime.
      It should cost more.
