  • Mushrooms are incredibly healthy and contain many of the nutrients our bodies need to function well. So, like most things, mushrooms can be eaten often and what better way to get our daily nutrients Mushroom Madras. Firm textured mushrooms in a slightly sour hot madras sauce. Simply Delicious!

    Ingredients
    400g Mushrooms
    7 tbsp oil
    3-4 green cardamon
    1 black cardamon
    1 bay leaf torn in half
    1 small cinnamon stick
    1 tbsp Garlic and ginger paste
    6 tbsp onion paste - see below - reverse base
    3 tbsp tomato paste - watered 2-1
    1 tbsp level mixed powder - see below
    1 tsp kashmiri chili powder
    1/2 tsp garam masala
    ½ tsp coriander powder
    ¼ tsp cumin
    ¼ tsp turmeric - optional
    1 ttsp kasoori methi - ADD THE METHI TOWARDS THE END OF COOKING TO AVOID BITTERNESS
    ¼ tsp salt or to taste
    Good glug Worcestershire sauce
    1 tsp tamarind paste
    juice of ¼ lemon
    water
    NOTE: ADD THE METHI TOWARDS THE END OF COOKING TO AVOID BITTERNESS - I was using oldish Methi with hardly any flavour

    I love a madras but i never get it to taste just like the takeaway. How about a chicken tikka madras recipe please.

    Uncooked mushrooms make the sauce turn black-what a load of old codswallop; whoever said that is not correct. Watching this video I think that if you rinsed all of your utensils and added the discarded herbs you could end up with a viable stock or even a light soup, sooo much flavour! Love your work mate.
