Lemon Ecalir
Lemon curd
2 whole eggs
3.5 oz/ 100g granulated sugar
1 oz /30 g Cornstarch
2oz/ 60 ml Lemon juice
1/2 tbsp lemon Zest
Choux pastry
3.5 oz/100g Water
1oz/ 24 g Heavy Cream
1 tsp sugar
1/4 tsp salt
4.5oz/125 g whole eggs
Merengue
2 oz/ 60 g Eggs whites
4oz/120g Granulated sugar
