I'm actually going to freeze mine before serving in future. If you do want it more crumbly to have with tea and coffee, fresh is the way to go though. Daz Approved! 👍This is a must try recipe, especially with Christmas just around the corner, only 4 days 'til Jesus's b-day! 😁 But the dried fruit is what Daz, I'm guessing raisins, dried cherries (saw some yummy dried sour montmorency cherries in Costco recently) and dried blueberries? As for the mixed spice, Pumpkin pie spice is similar just replaces the dry coriander with nutmeg, could I use this mix, then again, I can make the mixed spice,buying the ingredients separately and mixing together, I have seen the dried coriander, it's the seed, right? Merry Christmas Joe. So good to hear from you mate. The fruit mix is a common one in the cake aisles in supermarkets here and is generally, sultanas, raisins, orange peel and cherries. Some brands my add apple. I have been told by people in the USA that Pumpkin Spice is a close match. We don't really use that here, but it is slowly becoming more known. I'd go with pumpkin spice mate. One thing I noticed was that I froze most of the cake for Christmas Day and that the cake was even more moist after it defrosted. It's been so long since I have even heard of them let alone eaten one that I genuinely forgot that pineapple fruit cakes existed. I now realise what I've been missing for so long but couldn't put my finger on it - fruit cakes since I've done the adulting thing just never tasted quite right to me, never like the ones grandma made that I enjoyed as a kid. Now I know why. Pineapple. I am so happy you've made this video. I'm going to have to have a go at making one next time I get a chance to do some baking.
G'day! I cannot stand dry fruit cakes and this always pleases with the addition of that crushed pineapple. I do like to freeze and defrost it too as it seems to go just that bit more moist.
