I want to make these, but I wish she had given us the amounts in grams instead of cups to be able to be very precise. I'm going to store some in the fridge and some not to see what happens!
Don't put macarons in the fridge. Don't put any meringue based cookies in the fridge. They SHOULD be a little chewy, but also crispy. They should have texture. That is the point of the cookie.
FallenAngelofTime macarons should go into the fridge, it adds texture and made the cookies last longer. Some cookies have buttercream based fillings and those definitely need to go into the fridge
For anyone even contemplating the idea of ever making macarons at home - just don't do it. It's not worth it. They never turn out and it's a mess. Just go to the bakery and buy a couple and call it a day. You've been warned.
Watching Lindsay making macaroons is easier than making it myself :-)
And the only thing I don't like about macaroons is that they are way too sweet.
Your sifting technique made me cry

I agree. Meringue in the fridge will turn it into goo. The refrigerator is full of moisture, a meringue's worst enemy.

Macarons need maturation so they must go into the fridge to let the fillings absorb into the shells.
