Just made this recipe tonight - used a spicy sausage and a soffrito with a couple of bay leaves instead of just an onion, and spinach instead of kale; and I didn't have the seasoning blend so I just used italian seasoning, red pepper flake and minced garlic, and plenty of black pepper. According to everyone who tried it, this stuff _fucks._ Thanks for sharing!

That looks soooo good. I guess you could substitute a lb. of ground pork for the ground intestines. I can't tell if you used 1 or 2 lbs. of bacon, but it looks like a lot. Maybe 4oz. of cream. Good job...what a great idea for coming/cold weather-eventually.
That is one of the nicest versions of zuppa toscana I've ever seen! The only thing I would change is cannellini beans for the potatoes, but that's a personal preference. You've inspired my Monday night dinner! 💜

I make the same thing but I add zucchini to it. It’s amazing. I freeze it in portions and heat that up with maybe some quick garlics bread or a quick pasta or sandwich when I want real food but don’t wanna cook. One of the few things I never get tired of.

It was my first foray into the culinary arts because my real motivation was trying to figure out how to recreate it by taste. I've honed it over the years. Take my word: use spicy sausage instead and a bit of red pepper flakes. The heat balances the creaminess. In place of adding parm, blend a few chunks of potatoes and mix it back in to get an extra velveteen texture. Then top with the parm when serving.

I work at Olive garden and made all the soups/sauces. This is almost exactly how we made it. Add a teaspoon of red pepper flakes when cooking the sausage. No nutmeg or herb seasoning. Looks incredible!
@@hxhdfjifzirstc894 if it isn't a super crappy restaurant, it's easier usually to make it on site than to reheat it, especially if it's a lunch/dinner menu, you can make in a big pot and keep it warm

I make a soup that is very close to this one, except that I don't use bacon. It's an Italian soup and using hot italian sausage meat works the best if you want a bit of extra heat. When I want greens in it, I will add baby spinach; he uses Kale instead here. I rarely add cream, and it turns out just as tasty without it. I also add chopped spring onions; half to cook, half to garnish. I used baby red potatoes instead of yukon - they cook faster, the red skins DO stay on and it makes for a pretty looking soup. It is a very easy soup to put together.

It is really good. To add more crunch eat with croutons and add cheese for more flavor. Spicy or regular type. Add chili pepper flakes for spice or cayenne pepper. The spicier the better. U can use heavy whipping cream instead of half and half as well. It’s great.
I've made this many times. The recipe has been around for a very long time (Toscana Zuppa) from Olive Garden. Yummy. Only 4 to 5 ingredients (some don't add bacon)

I got this soup at Olive Garden three years ago. It was a takeout order. It was a bland, tasteless, watery mess. This is supposed to be good tasting soup. The next time I want this soup, I will make it myself.
Man, listen... these bacon-backed cream soups do very well with some kale. This is SUPER-EASY to make. You can make a lot, and invest in some glass quart jars to either shelf-stable can or refrigerate. Give some away to friends, they'll show up the next time you decide to make!

I love kale. I roast it with olive oil at 350-375 for 15-20 mins. and use it on my sandwiches. So yum!
