You could always do a carrot "butter" when I make pumpkin or carrot cakes I puree them with butter I prefer that as opposed to chopped up peices of it in the cakes/ breads

Tip to make them fluffier: separate yolks and eggs, beet whites then join yolks. You will need less eggs and get a fluffier and pillow texture.
