It’s comparable to corn starch but not exactly the same. Can you use corn starch if you dont have wheat starch?
You’ll need wheat starch or try the other recipe with glutinous rice flour.

You can use butter instead of lard. I have not yet tried with tapioca starch so I am unsure but it may work.

Hi, I recommend using wheat starch. Corn starch or potato starch can be substitute but I find wheat starch gives the best results.
Can we refrigerate or freeze before frying?
You can refrigerate. I have not tried freezing yet.
You didn’t use your kitchen aid, is it easier to mix by hand?
It’s the same, I prefer by hand so I know if I need more water or not. Also doing by hand prevents flour from getting into the air while mixing.
