    Cool video!
I freeze my meat for 30 minutes before cutting... it makes it so easy to cut

Why would you mix the wet parts with the meat? mix your wet parts by them self's before you add to the meat.

Why not use teriyaki sauce for teriyaki jerky? I'm not being negative, I'm curious if there is a reason?

The marinade ingredients come together to create your own!
This is not not a traditional 'by definition' teriyaki but similar bold taste. You can always substitute a pre-made teriyaki sauce for the marinade if you have a favorite :)

You need a sharp knife! It makes the job so much easier.

That’s the dullest “really sharp knife” I have ever seen!

You need a better, sharper knife. Also, partially freeze the meat for easier trimming and portioning. It was painful watching you do this. More counter space would help. Looks like you over-dried it. You essentially made meat crackers.
