The marinade ingredients come together to create your own! This is not not a traditional 'by definition' teriyaki but similar bold taste. You can always substitute a pre-made teriyaki sauce for the marinade if you have a favorite :)
You need a better, sharper knife. Also, partially freeze the meat for easier trimming and portioning. It was painful watching you do this. More counter space would help. Looks like you over-dried it. You essentially made meat crackers.

Why would you mix the wet parts with the meat? mix your wet parts by them self's before you add to the meat.
