Hi Marie. I understand. I really suggest adding carrots and celery to make ragu but, if you want, it may be easier to throw carrots, onion and celery into a blender :) Obviously, you are free to do what is best for you tho! Have a great day 😃
Sofritto meaning - comes from the verb Soffrigere which means to slowly fry or saute in Italian. It's a mix of finely chopped carrot, celery, and onion also known as the "holy trinity" in Italian cooking

In Australia and most other English-speaking countries it is called a mirepoix, and the butter and flour start to the bechamel is called a roux. No they’re not originally English words but it’s just the same as how we say deja vu, soprano, lasagne or beret for instance, they have become part of our language and are in English dictionaries. We have many words like that as English has absorbed and assimilated such a mixture of words derived from many sources.
Oh thank goodness, somebody who cooks like me. I make this as a basic filling all the time, but even add chopped potatoes, mushrooms, tomatoes, garlic, kale, Italian herbs, (sometimes cinnamon stick & allspice) and tomato puree. I'm vegan but add THE most delicious combination of Incredible burger and Incredible sausage (faux meat) with a bit of vegan parmesan to the mixture. I use this for everything from basic spaghetti to moussaka. I know Italians are minimalists, but give this a try. You might like it. Ciao.🌹

I'm quite slow making this one, but it really worths it. First I tried it with pasta, and this week I made the lasagna for the first time. We all loved it. =)
I like to do this and the Ragu (meat) they both have a place but are entirely different. Calling it a meatless meat sauce is silly, you should just be vegetarian. I love vegetarian and vegan food.

That looks good but that is a lot of working with all the chopping! Wouldnt the sauce be just as good without the carrots and celery?

Sofrito means lightly fried if you break it down, but the word is used in English too to mean diced aromatics sautéed to start a sauce.
that makes a lot of sense. In english is more of a sentence than a word but it works either way. Thank you for your comment ;)
