Homemade Marshmallows:
1. Combine 1 cup of filtered water and ½ cup of Gelatin in a mixing bowl and let it sit to bloom (just let the water absorb the gelatin, unstirred) while you heat the other ingredients.
2. Combine 3/4 cup of water, 350g honey, splash of vanilla, and pinch of salt in a pot over medium heat on the stove, and stir to combine. (Do not let it come to a boil.)
This is when you'd want to line a pan with parchment paper because after the mixture has been whipped, it becomes stiff fairly quickly.
3. Start mixing gelatin on low in the mixer and slowly pour in the honey mixture.
4. Gradually increase to high speed and mix for about 10 minutes or until it looks mallowy.
5. Quickly scoop into a parchment lined pan and let them sit for a few hours, then cut into squares.
Optional: brush them with arrowroot powder to prevent them from sticking together.

Brown Sugar Cardamom Cookies:
INGREDIENTS:
2 cups almond flour
3/4 cup Brown Swerve
2 tsp ground cardamom 1/2 tsp cinnamon
1/2 tsp baking soda 1/4 tsp salt
1 large egg
1/2 cup butter, melted and cooled 1/2 tsp vanilla extract
1/3 cup sugar-free white chocolate chips
DIRECTIONS:
Preheat the oven to 325°F and line a large sheet with a silicone baking mat or parchment paper.
Whisk together the almond flour, Brown Swerve, cardamom, cinnamon, baking soda, and salt in a large bowl.
Stir in the butter, egg, and vanilla extract until the dough comes together. Stir in the white chocolate chips. Roll into 1-inch balls.
Press the balls down to about 3/4 inch thick with the palm of your hand. Don't press down too much, as these cookies will spread on their own.
Bake 15-18 minutes, until puffed and golden brown around the edges. They will still be very soft. Remove from the oven and let cool completely on the pan.
Hmm, yum. Okay, need to relearn how to cook. My wife was the "baker" in the family. Since it's just me... well, I just need to learn to bake. Thank you for your Christmas spirit. I needed this today. MERRY CHRISTMAS! He is risen.
It is so much fun, a way to relax, I would encourage you to give it a go again.
I'm a cook not a baker because I don't like following directions, but I have learned that if I want certain cookies or baked items I have to follow directions. Merry Christmas to you, I hope you will get in the kitchen and give it a try! You can do like I do and if they are a flop ditch them like it never happened, and laugh at myself because some have really flopped! 😂😂🎅

Mom's crescent roll recipe used cardamom..... and it was the same recipe her aunt used for coffee cakes. Just different application and the coffee cakes obviously had filling. Lol.
I have learned 2 things from you 😊. # 1 is using honey instead of sugar for the homemade marshmallows. There is a really good marshmallow square recipe in the Company’s Coming square recipe book that was a favourite, I haven’t made it for years 😂 but I’m going to try it with honey. #2 is the cookie sheet liners that you use. Parchment paper is great but it would be awesome to use a reusable liner! The song is heartwarming, thank you Giselle for sharing your Christmas baking ❤😊🎄🙏🌨️

Hello Giselle. I read all of the Laura Ingalls Wilder books when I was growing up. Then I read them all to my daughters as they were growing up. When they were old enough we began visiting all of the Laura homes/museums. We've been to all several times. The best is her home in Mansfield, MO where she and her husband lived out their married lives and raised their daughter, Rose. Enjoy!

This is a very special time for Jews because it's a time of reflection and learning what we've let into our temples because the maccabees cleansed the temple after Antioch offered such an abomination. I want to cleanse my temple of any leaven that has been accepted through the yr. Because my body is the temple of the Ruach Hakodesh.

Love the marshmallows and your other yummys you bake but not so much on the ginger latte. You know my brother bought me an iced latte from the hoighty totoity place that everyone goes to and it was gross. I think there was too much coffee. Oh, we love Pumpkin Cappuccino this time of year. Ya know family, home and food makes for a holiday any day of the yr. I'm so thankful for the food God has given us. We feel like it's a holiday everyday. A friend made me some Cardamom Orange Snickerdoodles that were really good. Maybe try the cardamom cookies again and add a bit of orange juice and orange zest instead of the white chocolate chips and see if you like that better.
