I'm currently driving a 2015 fiesta, hubby taught me last year, I'm not a pro yet still stall sometimes, still scared of hills and I refuse to do handbrake hill start I'm more comfortable with balancing lol glad I learnt in an old car instead of these fancy cars with hill start assistance.
Do you have a video specialized for uphills? I have a license and have had for nearly 6 years, but as I don't own a car and only use my dad, I would say I have around... 20-30 hrs of driving experience total, and I remember that one time on driving school, I got a class just for practice before the exam, and one thing that I asked was to reinforce uphill stops. When I stalled the car, and slammed the brake, and saw the car still going backwards I low-key panicked, and ever since I always use the e-brake to come out from a uphill stop. This panic comes too because where I live there's many taxies, and they're always in a hurry and always stops reaaaally close to the tail of your car, enough for a single stall to bump them, so this is something that I have always feared. I haven't had a lot of practice of this, but because of this fear, I always end up skidding, which I prefer over the chance of stalling and going backwards, but I reckon this is HORRIBLE for the clutch. I even struggle in my dad's car that has uphill assistant (stops the car for about 2 seconds after releasing the brake pedal), but I need to learn the proper way because I'm going to buy a first car for myself, that is an old one and lacks this feature (My dad stressed me so much about the care of his car that I no longer want to drive it anymore) For further context, in my city, there are very steep driveways, with lots of traffic, and very narrow which becomes narrower because of cars that doesn't park properly and irregular streets that doesn't follow the driveway code. Likely the closest comparison you can make is thinking of the streets of Italy.
it just depends... if your high in the rpms in second and need to brake you can, however if your revs hit below idle then you'll most likely stall unless you have enough wheel-speed. So brake first as the rpms get near idle I would clutch in then fully brake to a stop, then let off the clutch. Also I personally would never downshift ever into first if my wheels are still moving ALWAYS downshift into second most of the time the clutch rarely has to even slip that much to get it into gear. I really only use 1st to get going from 0.

Is it necessary to do all the downshifting from 5 to 1 or even to 2?
No. You can go from whatever gear you want as long as the speed is right
