    Ingredients:
    1 kg basmati rice, soaked for 30 minutes and drained
    1 kg fresh peas
    1/2 cup oil
    3 medium onion, thinly sliced
    1 teaspoon black peppercorns
    6-8 cloves
    2 cinnamon stick
    2 green cardamom pods
    1 dried lemon
    1 tablspoon garlic paste
    1 tablespoon ginger paste
    2 whole green chillies
    1 1/2 liter water
    Salt to taste
    1 tbsp chopped green chillies
    Vegetable Raita:
    500 g yogurt
    1/2 teaspoon salt
    1/4 teaspoon chilli flakes
    1/2 teaspoon black salt
    1/2 teaspoon chaat masala
    1 teaspoon roasted cumin and coriander
    1 small chopped tomato
    1/4 cup chopped cucumber
    2 tablespoon chopped onions
    1 chopped green chillie
    1 tablespoon fresh coriander
    Pea(matar) preparation:
    1 kg fresh peas
    1 litre water
    1/2 teaspoon salt
    1/2 teaspoon sugar
    1/2 vinegar
    2 tablespoon oil
    1/4 teaspoon garlic
    1/4 teaspoon ginger
    1/4 teaspoon coriander powder
    1/4 teaspoon chilli flakes
    1/4 teaspoon salt
    Method:
    Heat up the pan add water and bring it to boil. Add peas,salt,sugar, vinegar and boil until soft. Then drain it. Add 2 tbsp oil in a pan and fry peas for a while with ginger, garlic,chilli flakes,salt and coriander powder. Switch off the stove and set aside.
    Heat oil in a deep pan over medium heat. Once hot, add cloves, cinnamon,dried lemon cardamom, and peppercorns. Let them sizzle for a few seconds until fragrant."
    Now, add the sliced onions and fry them until they’re golden brown. This step adds a lot of flavor to the pulao.
    Next, stir in the ginger-garlic paste and cook for about a minute until the raw smell disappears.
    Time to add water and bring it to boil, then add the drained rice. Mix gently so the rice gets coated in all those lovely spices.
    Once it starts boiling, lower the heat and let it cook for about 12-15 minutes or until the rice is tender and almost the water is absorbed.
    Now add prepared peas and mix gently. Sprinkle all spice powder, lemon slices and fried onions.Cover and simmer for 7 minutes.
    Our Matar Pulao is ready! Doesn’t that look amazing? Fluff it gently.
    The rice is perfectly cooked, and the peas are so sweet and tender. This Matar Pulao is comfort food at its best. Serve it with raita, pickle, or even a simple curry, and you’re in for a treat.
