Just getting into red snapper this will be 2nd time. This 1st video I saw fried so I had to watch. To me snapper is a hardier fish than flounder. I enjoyed the choice of seasoning but don't have all ingredients. Have marinating in wine before seeing video but I'm gonna towel dry and try to fry. Thank for posting.
One complaint i have about some soul food, and this demonstration makes my point: with all the spice and seasoning and hot sauces, what difference does it make if its a breaded meatball, chicken, steak, or fish. It's very good im sure, but the reason most fish breading is light and lightly seasoned IS TO ENJOY THE FISH along with some breading. Japanese tempura for example. It's light, airy, lightly seasoned yet crunchy. Some soul food emphasizes my point and if you find the right place you'll go back every time. but the hot sauce is definitely a condiment requirement. I prefer fresh lemon juice or malted vinegar on my corn meal, corn STARCH, salt pepper breaded filets. Save the hot sauce for tacos. It cuts the mild fish flavor too much.
How the hell can you complain about how someone else liked their food? Just make fish how you like and we'll continue putting hot sauce on our fish because thats what we like.

You should try it, you can't taste the egg. But it is just as good without the egg.
