I own an inTech trailer and the Dometic AC included with it is loud and undersized. Once the AC gets overwhelmed, it's all over. With a 100F-degree ambient, the trailer struggles to stay below 90F on the inside. These guys claim to be the best, but they fall short in many ways.
Not defending them, but an air conditioner can only produce 15 to 20 degrees difference from the outside temp. When the ext temp gets near 100, good luck with any single AC unit.
You should look at the Truma AC for off grid. Love what you guys are doing build wise.
