Don't let the haters get to you, Laura. They will always find a reason to criticise you, and if they must, they'll invent one - no matter how ridiculous.
I for one love myself some humorous remarks, and I don't see any offence in your cheese-joke, as obviously, it was a JOKE and not meant seriously - DUH. I myself am lactose-intolerant, thus could have been offended by dairy-related jokes, but was not because - why should I?! Lactose-intolerant does not equal "void of humour". Laughed out loud instead at your remark, it was hilarious :D
Please dont politically-correct all the life out your lovely videos, it would be a shame!

Laura this looks sooooo good!!! How do you think these would freeze? Freeze just the filling maybe and use fresh peppers every time or could they be frozen individually after they've been assembled but before the second baking? I love your recipes and a busy student like me would love to have some stashed away for a quick delicious meal!

i dont know if you know how tp make this but i really love dolma or some times they are called dolmadas but basically stuffed vine leaves. If you do know i would love a recipe. These stuffed peppers look delicious and reminded me of dolma.
I volunteer to feed the hungry at a food pantry ( everyone should back to those in need) we give out lots of rice, beans, peppers, can sauce,, im going to print out this recipe for our patrons, im sure they would love to have most items on hand, something different for them to make for their families to eat for dinner and only a couple of items for them to buy, :-) Thank you again, God Bles, Deb

I'm about to get a tonne of capsicum because they are growing in my garden so I'm really excited to try this!
Yum I tried to make those and they were so delicious
The authentic Mediterranean recipe for this is to mix good quality raw lamb mince with raw short grain rice (like pudding rice) and add some tomato paste and allspice (seven spices) with some salt. The peppers (green or red) are prepared by only removing the green stem on top and carving the seeds out. They are then filled with the mince/rice mixture (3/4 of it not all the way up) and then the top of the pepper is closed again with the stem that was removed earlier. The peppers will then be cooked in a sauce made of water, chicken stock (vegetable, beef or lamb could also be used), good amount of tomato paste, allspice, and dried mint. The stock should cover the peppers because they should be boiled and a brick should be placed on top of them inside the deep boiling container so that they do not float on top of the stock and the rice gets loose and out of the peppers. They would take from one hour to two hours depending on the amount cooked. They would then be removed from the stock carefully and the stock poured separately to be used as a sauce over the peppers when served.

I made this even following my paleo diet by replacing the beans with a mixture of vegetables chopped small, the brown rice with cauliflower rice, the oil to cook the meat with coconut oil, and sugar with a teaspoon of maple syrup.
