Ну обычно хребты, головы и прочее продают на суповые наборы, на корма животным (так же для крупного скота в виде минеральных добавок), удобрения для почвы.
Hopefully for fish stock because it would be such a waste! I would gladly take some off their hands and make some fish stock and soup from some of those leftover meaty bits.
