I just made this tonight with some boneless pork chops, white rice and mixed vegetables. It was delicious. I used all the ingredients you used, minus the sofrito. I didn’t have any, so I just used cut up onions and green bell peppers instead. I’ll definitely be making this again.
If you skip the cornstarch, it will be more broth like...thin liquid, like a soup. But if you still want it thicken without corn starch. My suggestion is....add to it an extra potato or two, finely chopped. Add it in, at the last ten minutes of cooking on a medium low heat. As it cooks, it will thicken the stew liquid. Also a short cut, is to take some of the stew liquid from the pork chops. Set in a mixing bowl and add one tablespoon at a time of INSTANT DRIED MASH POTATOES. Until it reaches your desired thickness and than add back to the pot of pork chops and blend well.

I don't use Adobo seasoning. I use Sazonador Total by Goya. I like it's flavor and texture better, plus it has less salt in it. We all have our preferences. That's what makes this dish delicious.
