    I went to Poland in 1995. I can still remember the smell of this food in Wroclaw train station. I asked my girlfriend, what is that smell? She said Zapiekanki, which sounds really funny to me.

    I was born in Canada mere months after my family emigrated here a few years after WWII. I grew up with Polish traditions that faded over time after my parents died several decades ago. You rekindle them in a way that makes me feel I’m home.

    I was adopted but know that my birth father was Polish. Food has been the way that I’ve tried to connect to that part of myself. I just made these (a vegan version, like your husband said… yes it is possible!) and am leaving this comment as I eat it now! 😂 Thank you so much for this video, I can’t wait to watch the others that you have.
    Mine had ketchup, onions, mushrooms, vegan deli slices, vegan cheese, chives, pickles and some leftover truffle mayonnaise I made the other day!

    Looks delicious! I am an American of Irish, Polish and German descent. I never met my grandfather, Stanley Pastewka, as he passed before I was born. He was born and raised on the outskirts of Warsaw and migrated to USA before WWII. I am enjoying your videos and learning a little of my generational heritage and culture. Your English vocabulary is great! I have been living in the Philippines for more than 20 years and wish I could speak Tagalog as well as you speak English.
    Looking forward to making this and pierogi. I remember my mother making goulash growing up.... Wonderful memories!

    As an American of Polish roots. My great great dziadzko and great Babcia came to Up State New York around 1912-1917. My great grandfather was a cobbler all from Zolynia, and Kraków. My 3 great grand aunts on my great Babcia’s moved from Zolynia to Warsaw during time of Austria-Hungary. Mushrooms, cheese, and Polish smoked sausages are mandatory for my dads side. I would enjoy kielbasi and mushrooms on my Zapiekanka.

    I like to add a bit of onion when stewing the mushrooms.
    And then I let it all cool in the pan and mix in the cheese with it and apply that to the bread.
    Gruyere is very nice for this IMHO.
    Oh! Maybe it's just me but Sriracha after they're baked!
    Yum!
    Oh! And butter the bread if you fear it drying out!😁

    Made the one with ham. Not a fan of ketchup so used Contandina Pizza Sauce in the Squeeze bottle.

    The easiest and most common way to make the basic type of zapiekanka - with mushrooms and cheese - is to grate both cheese (any easily melting one) and some button mushrooms / portobellos quite roughly, mix them together, put a portion on any slightly buttered bun you like (even sourdough bread works well here) and put them into the oven for max. 10 min (180*C / 350*F), until the cheese is melted. Then put some ketchup on them, add salt and pepper or chilli flakes (that's optional) - and they are ready. By the way, one-day old kaiser rolls work best, from my experience - and I've been making them for years:) And yes, you can add anything on them, as long as there is lots of cheese AND ketchup or any other hot sauce of your choice on top:)

    These look fabulous. Did you happen to use convection to help speed the crisping? I can use that or turn it off on my oven.

      She is Polish and I believe born and raised in Poland. She has moved away and back, but I think she is currently there again. She has some videos about it.

      I'm surprised since Kraków, in particular, is famous for them (Kazimierz, Plac Nowy). We had several "zapiekanki" and "tosty" stands in Szczecin in the 80s.

      Most people just use mozzarella. But you can do what ever you want. Alot of people use pasta instead of mushrooms too. There's no one way to make it, everyone has their own way
