    Ingredients:
    *1 cup urad dal (split black gram)*
    *1 small onion, finely chopped*
    *2 green chilies, finely chopped*
    *1 tablespoon grated ginger*
    *1 tablespoon chopped cilantro*
    *1 tablespoon chopped curry leaves*
    *1 teaspoon cumin seeds*
    *1/2 teaspoon black pepper*
    *1/2 teaspoon baking soda (optional)*
    *Salt to taste*
    *Oil for deep frying*
    Instructions:
    1. *Soak the Dal:*
    Rinse the urad dal and soak it in water for 4-6 hours or overnight.
    2. *Prepare the Batter:*
    Drain the soaked dal and grind it to a smooth batter using a little water. The batter should be thick and fluffy.
    Transfer the batter to a mixing bowl.
    3. *Add Ingredients:*
    Add finely chopped onion, green chilies, grated ginger, cilantro, curry leaves, cumin seeds, black pepper, and salt to the batter. Mix well.
    If using, add the baking soda and mix gently.
    4. *Heat the Oil:*
    Heat oil in a deep frying pan or kadai over medium heat.
    5. *Fry the Vadas:*
    Wet your hands or use a spoon to shape small portions of batter into round or oval discs.
    Carefully slide the vadas into the hot oil. Fry a few at a time to avoid overcrowding.
    Fry until the vadas are golden brown and crisp, turning them occasionally for even cooking.
    6. *Drain and Serve:*
    Remove the vadas from the oil using a slotted spoon and drain them on paper towels.
    Serve hot with coconut chutney, sambar, or your favorite dip.
