This is one of the best videos I have seen in a long time. You did an amazing job! I love Krispy Kreme doughnuts, and have wondered how they are made. Even though I've seen their machine in operation, I was not able to see behind the proofer and always wondered how the batter was poured.
I have a question about the Fire Suppression System - The sprinklers. I assume it's not water because of the hot oil, so what is it? A gas or other liquid?
The fire suppression system is not a sprinkler. More likely it uses a heavier than air inert gas to exclude the oxygen in the air from reaching the fuel. In using an inert gas, such as CO2 you can re start fairly quickly once the fire is extinguished, as the gas will not contaminate the shortening or the food. It may also use foam. This is essentially soapy water. You would coat the entire surface of the burning oil with foam bu7t this will contaminate things requiring you to change the oil, then clean the entire machine before you can resume. You never want to put water on an oil fire because the water will sing in the oil, then flash to steam explosively, splashing burning oil all over the place.
Why doesn't anyone ever acknowledge the change that has occurred somewhere over the last several years??? They're now BIGGER, and no have a different taste. Normally, bigger donut would be a plus. However, its not in this case. They USE to be more skinny yet perfect & they would MELT IN YOUR MOUTH when hot. NOW they are bigger, but still fluffy in the middle, ok, so that should be a plus, but they DON'T MELT IN YOUR MOUTH anymore, even if hot. They're just fresh, too sweet, and lack whatever it was that made em YUMMY.
To me the Krispy Kreme Donuts are not as good or as big as they used to be. I remember when you used to buy them from groups at school by the boxes and they would be just like they where just made. I found a local donut shop that makes the Donuts like Krispy Kreme used to 😎☕

Most Krispy stores have their machines set up so you can watch the whole process, start to finish. It's neat. Especially when you manage to buy the doughnut you watched being made, fresh off the belt.
It's really satisfying kind of like going to a Japanese Steakhouse and watching your food be made in front of you - it also helps immensely with wait times because you can see your food being made right in front of you!
They're probably using something like sodium stearoyl lactylate. I use that when baking at home for buns that are soft but voluminous . Little Caesars uses it in their pizza dough too.

Yeah water would make the fire worse. CO2 or some gas like Halon. I just read a report about an actual fire where this system was used, and it said it kept the fire "contained" until people got there (it was at night, somebody left the heating elements on).
I don't know exactly what chemical is used, and it varies per location, but it is usually a dry chemical which produces a ton of C02 when heated. The mechanism that triggers it is literally (usually) just 2 pieces of metal glued together with a heat-sensitive adhesive, then put under spring tension. Enough heat melts the glue, the spring pulls the wire and it dumps the dry chem on the fire. Again I don't know for sure 100% this stuff, but I work in kitchen exhaust cleaning so I interact with this stuff every day.
Also on cute, tho the reason is clear; 2:18 That is the cutest name imaginable for an automatic donut machine, and it legit made me audibly Awwwww when i heard it xD The Krispy Automatic Ring-King Jr is the goodest of boys

Instead, they use a chemical foam that cuts off the oxygen supply to the fire, effectively smothering it. For oil fires, a Class K fire extinguisher (United States) or a Class F extinguisher (Europe) is designed specifically for cooking oils and fats. Another thing that they use is a fire blanket. A fire blanket works by smothering the fire, cutting off the oxygen supply that the fire needs to continue burning.
I remember as a kid how excited my brothers and I would get when we pulled into Krispy Kreme and the Hot Donuts Now sign was on. To this day I haven’t met anyone who doesn’t agree when it comes to hot Krispy Kreme donuts off the line, they just melt in your mouth like nothing you’ve ever had before, it’s definitely a treat like no other.
Weirdly we have several locations in Minnesota 20 years ago. They were incredibly popular, the line at the Maple Grove location was long the months they first opened. Now all the stores are gone.

Considering it is a grease fire, I doubt they use water sprinklers. Sure, there are mist sprinkler that do a decent job of putting out small grease and oil fires from e.g. a spill,. but a tub of burning grease, not likely.

My wife -- a diabetic -- wishes she could buy an UNGLAZED DONUT from the nearby KK store, but the manager says "Sorry, but NO." So I have to CAREFULLY SCRAPE OFF the glaze, so I can give the "naked" KK donut to my 84-year-old wife. But she is a wonderful woman -- and worth all that extra hassle for my arthritic hands. К озвучке такого фильма нужно готовиться и текст хотя бы два раза прочитать ДО работы.

My wife -- a diabetic -- wishes she could buy an UNGLAZED DONUT from the nearby KK store, but the manager says "Sorry, but NO." So I have to CAREFULLY SCRAPE OFF the glaze, so I can give the "naked" KK donut to my 84-year-old wife. But she is a wonderful woman -- and worth all that extra hassle for my arthritic hands.
