Recommendation for the elytra course: use trip wires on the final ring to trigger the stop. Would also be great to do the same for the start...

there was one me and my brother designed, it works one of two ways. You have a platform full of dispensers facing upward that you stand on. (any size, but 8x8 is pretty nice) You put pressure plates below the dispensers and fill each one up with armor stands or fire charges. To start the round, you get on the platform and press a button to start the round, which is a few chickens or bats spawned above the pressure plates (iron or gold if using bats) to randomly activate the dispensers. If using armor stands, test your reaction time by using a sword or axe and swinging at them as soon as they appear. (this version is also kind of like standing in the middle of a whack-a-mole carnival game lol)
If using fire charges, dodge around for as long as you can (chickens are more predictable, which gives you the ability to dodge fairly well) and try to see how long you can survive.
That’s really creative!
I was playing with command blocks since 1.14 released. And now I learned it so much, that I made kind of a cool game. (I don't know if any youtubers did this. This is an idea from my own imagination.). You had a couple of +NBT command blocks that basically said "/setblock ~ ~ ~1 (color)_wool". It let you draw as you place it. I made a small canvas with white wool and black concrete outline. behind the white wool there were observers. They could tell if the color changed. Behind these observers, on the side which it powers, there were command blocks that would remove the command block you just placed to paint. After that, I made a 100x100 canvas. It was really painful to place all the command blocks behind observers. I knew, that it couldn't stop here. I made a couple more command blocks with different types of blocks to paint better. I have 4 siblings, so we basically played jamspace (discord activity) in minecraft. I really liked it. But after a week, I deleted this world and started more learning.
The chicken hunt can be improved with this:
Use a target block for walls and after them, place hoppers, Like time-counter use gold nuggets and when a arrow hits to targets, a nugget drops.

For the chicken hunt. Instead of putting the comparator and 2 repeaters at the bottom, just run the redstone line to the switch/lever.

These are awesome had some trouble with the cobblestone generator though maybe it’s a Xbox thing but the lave wouldn’t mix with the water from the stairs when it flows downwards for some reason had to make it flow in from the side not sure why that is but I was able to make my own contraption to make the pistons n such worth without the first part of red stone that my lave flowing in from the side would block
Tip for filling the dispensers for the chicken game in creative: you can fill one dispenser and use ctrl+scrollwheel to copy it with the NBT data

You could improve the chicken hunt by doing this:
Replace the walls with target blocks connected to a command block with a scoreboard for total arrows used and;
A command block detects chickens killed for score
He made this mini games to be in survival too :v

Your 2 player mini game was nice but you can use drip leaf instead of cobblestone and to increase height, you can bonemeal the drip leaf .

The parkour is pretty much flawed here, you should put something like a sort of wall to separate every checkpoints and also don't forget to elevate the end of at least 1 block beyond the water.
Or else the person who does this just lazily passes trough the water and bam.
You can spectate your friends while they do the parkour to ensure that they don't cheat

Good but your third one (spleef) is a lot more trouble then it needs to be. Just use a snow arena and shovels works a lot better

you can divide the timer by 2.5 to convert it to seconds because hopper inserts item faster than a second
Need help. For the chicken shooting game, sometimes the eggs will just bounce off the opposite block and not crack, triggering the tripwire. This will automatically end the round on the 1st shoot. Is there any guarantee way for the eggs to crack on impact? Does the type of block on the opposite side matter?

Make obsidian house 5×5×5 and some small bedrock walls. Outside the obsidian structure place chests full of TNT. Inside Obsidian Structure Play with your friend with Tnt when friend place TNT near you Rum behind Bedrock wall! Super fun
