Pigtail Corn Soup | Taste of Trini

  • Here's one of my favorite soup dishes, Pigtail Corn Soup! This is the ultimate comfort food. Here's what you need to complete the recipe:
    2 1/2 lbs of salted pigtails (chopped & boiled 3 times- 75 minutes in total)
    2 cups of flour + salt + pinch of sugar + 2 tbsps coconut milk powder + water
    1 cup of green seasoning (season the pigtail with 1/4 and use the rest in the soup) - mine had 12 leaves of bandhania, 2 heads of garlic, 2 hot peppers and 5 pimento peppers
    1 tablespoon of soy sauce
    2 tablespoons of ketchup
    generous sprinkle of black pepper
    2 cups of chopped pumpkin
    sweet potato
    eddoes
    green fig/banana
    cassava/yuca
    potatoes
    2 carrots, grated
    1 sweet pepper, diced
    1 onion, diced
    4 corns on the cob, chopped
    1 cup of chopped celery leaf
    2 stalks of scallion/chive, chopped
    half can of coconut milk
    1 tablespoon of oil
    2 tablespoons of brown sugar
    1 pack of Grace pumpkin flavored soup
    1 tablespoon Golden Ray butter
    salt
    hot pepper

    This is one of our favorite dishes to make. We are Trinidadian farmers and after a hard day's work on the farm nothing feels better than a fresh bath, some puncheon and fresh lime juice and this on a quiet evening

    Beautifully done, right now im having a huge bowl of this my mom made , but mine has blackeye peas instead of dhal , still very yummy im my tummy..

      +Taste of Trini it was good, I've noticed online they are doing a lot of these and I was thinking to do one but with an easy recipe that doesn't have much explaining .

    I made this last Sunday evening for family and friends 'liming' at my home. Twas deelicious!! I used split peas, as well as channa.
    I also did some boiled corn with plenty shadon beni!!

    i hate having to boil the splitpeas so i just boil extra when making dhal and freeze it in small portions or i always buy the grind splitpeas powder and dissolve about 2 tbsps in some warm water no lumps and add it to my soup. you would never know the difference. love this my daughters favourite. have a great week everyone.

    Good morning I’m from Dominican Republic but my brother girlfriend used to cook him this soup do you change the water every 25 minutes or just boil for 1:15 minutes I’m a little confused

    I love the beautiful rich color - looks delicious. Does the browning add a sweet taste to it?Also the coconut power you used in the dumpling mix where did you source it? Does it taste like the real stuff? Thanks again for the wonderful video.

      Nah, the sugar just gives it a nice color. I got the coconut powder in Trinidad and you can find it in any west Indian store as well

      It does taste similar but fresh is always best. I use the powder for dumplings and the canned or fresh coconut milk for soups or pelau

    Looks good my friend but you know i don't do red meat or pork.. So can i use some smoke turkey?I know it wouldn't taste the same but i love all the other ingredients .Thanks for sharing .

    nice... my method slightly differ. but if everybody eating pork ok.... i chunkay pigtail with the peas but remove till later on. leave peas to burst in little water til peas melted then add more hot water/ fresh cloth squeezed coconut milk & add every thing else to cook well then include pigtails steeping in coconut milk, plantain & mini dumplins golden ray butter. searve hot & you can add shrimp meat, salt beef aswell for more flavour
