You won't see quite the vivid color variations that are present in these videos of the Milky Way, since the cameras have the advantage of longer exposure times to collect light than your eyes, among other advantages. Still, the experience is absolutely more spellbinding than watching any video representation of it. Staring into the heart of our own galaxy is amazing, and I was in awe looking at the Andromeda galaxy with just the naked eye.
