Two things: never grate the white part (pith) of a lemon - it's very bitter. Only grate the bright yellow and then keep rolling the lemon to a new place to avoid the pith - and use the finer grates not the one with the big holes. Other thing: re: meringue at end: don't whip it quite to that extent - meringue should be nice, soft but firm "pillows" at end - it will swirl much more easily on the top of the dessert and would look even prettier if lightly baked in oven for a few minutes to lightly brown the meringue.

I find it confusing that you give your measures in both volumes and weights use the fine side of the box grater next time and grate the skin and not the pithy part of the peel

Another tip , use a cake makers spatula to spread the meringue topping evenly and a chiefs torch to caramelize the peaks of the topping
