dude, love your set up on espresso machines...I think there was 4 of them maybe 5...guess you need all of them for when you have a bigger order like that....always wanted a coffee bar...you kinda make it intimidating but I guess in time comes great skills....great video !!!!!
Technique notes: 1. Steams for 20 seconds, then separates non-stretched milk from foam. 2. No pre-infusion. Just a quick flush, in goes the portafilter, pull the lever down then release. 3. No WDT or other distribution. Grind, tamp and brew. 4. Shots take approximately 40 seconds.

I roast green coffee in my house in a cast iron pan and make espresso on a piece of junk DeLongi machine but I can't understand 90 percent of what you do. It's Imcredible .
all I can say he is not so different than the brain surgery doctor both have in common the performance of perfection of the art they learned one is medically speaking the other artistically speaking my 1st job ever was becoming a barista didn't go to school for it but when you have passion to do something the sky is the limit, just look the authenticity of his smile he was really enjoyed what he was doing you can't fake that.

To answer your question: I know my machine really really well after pouring thousands of coffees. At some point you just know when the milk is ready. It's good advice to work with a thermometer in the beginning .. but at some point you know exactly how long it takes plus you know what 65 degreed feel like when you touch the jug :) Hope this explains it. I will try to explain. What you want from frothed milk is a microfoam. Sometimes during frothing the milk it can take too much air and foam gets large air bubbles that are dry in taste. This big bubbles will form at the top of the milk jug, so you can get rid of them by spilling some milk away. This will leave only perfect microfoam that is underneath.
