I agree, kefir is simple. I started a few weeks ago and I dont even have to think about it now. I also started kombucha, which is a bit more work and a longer brew time but still easy enough. Sauerkraut, did not end well though.
What I think..I use a plastic strainer since when I started that was the recommendation but I am yet to see evidence of metal strainers affecting grains. I have seen many people straining their grains with metal strainers without any problems. You do not want to store kefir in metal containers because of the acidity and reacting with the metal. Perhaps this is the concern, but straining is quick and grains do not seat there for any extended time.

I see that you're using what looks like a metal strainer. I read somewhere that metal will kill the kefir grains. Is that true?
