Flaky vs Fluffy Sourdough Cinnamon Rolls! A challenge!

- Recipes AND a Giveaway in this one! Testing my famous sourdough cinnamon roll recipe up against a new biscuit cinnamon roll I created! The outcome? Watch and see. One is leavened, made to be very traditional in its characteristics: Fluffy, gooey, delicious. The other more like a flaky shortbread made into a cinnamon roll. Fluffy sourdough cinnamon roll dough recipe: turnerfarm.ca/blogs/recipes/s...
Biscuit Cinnamon Rolls:
1 3/4 cups flour
1 tbsp baking powder
1/4 tsp baking soda
1 tsp salt
2 tbsp sugar
1/2 cup butter
1 cup sourdough discard
Filling:
1/2 soft butter
1/2 coconut sugar or brown sugar
1/2 cup maple or cane sugar
2 tsp cinnamon
- whisk together all dry ingredients.
- grate cold butter and cut into the flour mixture using a fork or by hand until it resembles coarse crumbs.
- pour in sourdough discard and stir quickly to incorporate. gather the dough in hands util all the ingredients come together to form a dough ball.
-Roll out the dough into a large square. Beat together all the filling ingredients and spread evenly on rolled out dough.
-Roll up and cut into pieces. Place rolls on a pan and bake at 350 for 25-30 minutes. (watch them, this depends on how thin they are).
- Drizzle with a glaze (optional).

I think it’s hard to say! I love how quick the biscuit ones are and for a pastry for of breakfast they’re perfect, but the fluffy are a lovely texture and just so decadent! Idk both so good! I could see myself making the biscuit ones more though just because they’re quicker!

I think I would like the flakey!! Don’t get me wrong I love a traditional cinnamon roll. I make yours from the cookbook all the time! But, I always have leaned towards less sweet treats like scones, croissants, biscuits etc. I cannot wait to make these for my family!!

A bakery near me has “morning buns” and the dough is croissant dough rolled into a cinnamon roll… so good!!!
I think I like the biscuit ones just a tad more. Cinnamon rolls are our favorite, though, and I will be making both to gift next holiday season! 🥰

The biscuit ones are like my Grama (from NB) used to make. The first time I had the more doughy ones I didn’t like them as much. I will be trying both for sure!
I’m team traditional. We love a fluffy roll plus prefer the fully fermented dough. I love the option of quick cinnamon rolls though so definitely saving this recipe!

The traditional recipe is a family favorite. Even my husband who usually doesn’t care for cinnamon rolls loves them. I love the idea of trying the flaky one and using when I don’t have as much time!

I LOVE the first recipe. Can you double or triple the first recipe in one bowl? I know you did a Christmas gifts episode and separated the different gifts into different bowls but I’m wondering if I could just make a big batch of the dough for several days worth of rolls for the freezer!

I love the fluffy cinnamon roll the best personally but that’s not to say I don’t like a flaky one. I have to limit my gluten though or my fibromyalgia goes crazy. I’m working on a gluten free recipe because I really miss really good baked goods.
